I can’t see the sense of using a top quality extra virgin olive oil for cooking here. I use it to finish dishes and salads? What are you thoughts on this?

Because it's food that you're going to eat and you don't use much. It also affects the final taste, a lot! I use Australian extra virgin olive oil all the time because it adds to the taste. And my kids notice when I don't.

Looks great! An English lady likes to use thighs, because she said they come off juicier than the breast. So, I guess if you like boneless thighs you can use them instead of breast , or like this recipe the breast, for the white meat eaters. Thank you Justine.🙂
