I only found Jacks channel two days ago and I've been kinda binge watching but I heard he past away two days ago, I'm wondering if that's why KZbin recommended this? As a tribute? I was so happy at finding a new channel with a genuinely nice guy and so knowledgeable and interesting to watch. My thoughts go to his Family and Friends. Tragic but he has left an amazing amount of videos for everyone to watch for ever. RIP Jack.

Yes he is a master of the Maillard reaction! THE one place where we home cooks fail miserably. We start low temp and go high... pro's like DJ start high and it shows in the taste and depth of their cooking.

the one thing i can't stand about these food preparation videos. there's nothing gradual about them. always outstanding! yet, is he proud of his Wolff cooktops that can be turned up so high,? or impatient- just jaded about cooking in general?, or, lastly, wanting to make more compact videos to upload in daddy Jack's library? ..no reason for the ridiculously high flame, irrespective of the dish. everything scorched earth attack. i think its: remember! "I'm the chef here, and YOU'RE watching ME!" it's that simple. (i think when he's at home- med. high suffices often enough.)

@@theoldbigmoose yeah, and make sure you have lackeys that can give you items verbally, or else it'll all scorch and turn to black. hey, give me "such and such." no chefs have a cameraman, AS WELL AS, an idiot who can feed you light cream, and chopped chives, while a flame rises above wrist level, making sauce. if he was strictly on his own, the flame wouldn't rise so high. the blower wouldn't have to be turned to max to survive there. remember: it's an ongoing concern. he only makes these during down time when he can add to his KZbin channel. if there were customers, and he wuz makin' six thangz: he wouldn't RISK flame that high on ANY ingredients! money money money

@dumb bell he’s right tho. Some bigger built chefs like this just have a certain way of dealing with food. They know what tastes good and what’s filling. Sometimes. Not all the time. But I’ve seen a pattern. They eat more than skinny people. Source: I’m skinny . Worked in a few restaurants

We were planning a trip to Connecticut to come and visit you….I’m heart broken that I never got the chance to meet this wonderful human being in person! Another one of life’s lessons, don’t ever let time pass you by, seize the moment, don’t put off for tomorrow what you can do today! If I would have followed that advice, I would have met this gem! Actually anything stroganoff is good. Just make sure the pan is really hot before you drop the meat into it.

I remember making spatzle at the Hilton in Adelaide, scraping the paste off with a spatula in long strands on a big board into a big pot of water. Made enough to feed an army, every time, and all gone at the end of service.

The fires have been terrible and we lost three American Fire fighters here a couple of days ago when their Lockheed C-130 Hercules came down too hard. An enormous sacrifice they made for us aussies and we won't forget. It's been a bad time for all mate. It's good to escape with a bit of quality cooking from Daddy Jacks though. God I love Stroganoff. I an old Bambushka taught me to add a touch of Russian ketchup it a tad sweeter. I learned to use creme fraiche as it will not crack and adds a better texture in my families opinion.

Its 2023. Can anybody explain the phenomenon of those videos flooding my feed? Dude was a legend. He is anything thay KZbin food chanels are not these days. His cooking style was a cousine jazz, many techniques could be considered incorrect but the one thing he did Perfect was bringing People to the table. Whole ethos of cooking was his bread and butter. Lovely person! Eventho he burned alot of garlic

not really related to this dish, just happened to be testing one of my creations today. my mom used to make a rip on what i've come to know as "rind rouladin" we called it steak with pickles . a rolled piece of round steak pounded , wrapped around a slice of onion and spear of dill pickle. i was faced with some leftover beef /mushroom gravy . used up some leftover , dried out corn tortillas , gravy mixture, sauteed onions, cheese,and dill slices layered them up in a sort of lasagna fashion and baked it off in a sort of "deconstructed" steak with pickles casserole turned out great . family loved it . reminded them of the same thing the bonus... used up a bunch of leftovers thanks jack .... "waste not want not"

Those practical gas professional burners are an inferno. They'd cook a turkey in 2 min. I wish I had them at home. They're great.
