Crispy* edges on prociutto, similar to american bacon!!! Out of the multitude of recipes, never have I observed this. Excellent* And the combo of mu'tard, tarragon cream. If you over reduce the sauce it will break up. If you see a little bit of oil on the edges of the pan, that's reduced enough.
