Cutting anything against the grain will make it more tender, but there are some items in sashimi where this isn't desirable. (I prefer cutting scallops with the grain to preserve the texture).

I'd usually go with thigh meat, but this definitely ends up more tender at room temp and it's moderately healthier

Hi Marc, I've always wondered about eating bento like this at lunch time. If this were prepared in the morning and taken for lunch 4 hours later, it seems like there could be food safety concerns. Clearly many people eat this way and it is fine, so I'm curious if you have any thoughts.

I'm not a food safety expert so I can't give you advice here. What I can say is that there are a few things done to mitigate risks. The first is that bento items are usually generously seasoned (i.e. salty, sour, or both). The second thing is that these days we don't usually pack bento in the hotter months of the year or if we have to, it's stored in an insulated bag with ice packs.

Who has used wooden bento boxes ? Are they easily cleaned ?

I'm not an expert here but from my understanding hinoki which is used for cutting boards and bento boxes here has anti-microbial compounds in it naturally. That being said, wood boxes do take more care as they will warp and split if you pack something with a lot of moisture in them. It's also important to wash it as soon as you finishing eating and dry it throughly. For every day use I use plastic bento boxes because they're cheaper, last longer, and are easier to maintain.
