I had this a few times in Iraq at a Turkish Restaurant on our base at Camp Liberty. Our interpreter loved it and made us all try it. It was great. This was 13 years ago and I have tried finding it at numerous Indian restaurants since. Every time it has been made differently from this, usually being made with a sauce and a completely different flavor. This recipe is exactly like the one I had in Iraq. I'm not sure where this recipe originates, but myself and my wife love it. I have made it 4 times so far. Not much effort other than having the correct spices, a skewer rack, charcoal grill and slicing the chicken. Thank you for posting this!!!!!

It looks like it would be pretty easy to make one if you know someone who can weld, its only a metal box on legs. The skewers could be made from square section bar with a point ground on one end with a piece of drilled broomstick for handles.

Overnight is too long for citric acid marinades. It will alter the texture of the meat, chemically cook it and result in dry meat. It's like making chicken ceviche. I made this mistake and wondered why my tikkas always turned out rubbery. The trick is: Add homemade ginger/garlic paste, oil, spices, and salt, leave overnight. Add lemon/lime and yogurt about 1 hour before cooking. Some credible sources did scientific research on marinades and concluded that a dry brine works better than actual marinades. Marinades will add a lot of flavor on the surface of meats, but not really penetrate into the meat.
