Anti-Inflammatory Turmeric Chicken Soup
Ingredients:
1/4 cup olive oil
1 medium onion, diced
1 large leek (white and light green parts only), halved lengthwise and thinly sliced
3 large carrots, thinly sliced
3 celery stalks, thinly sliced
1 teaspoon salt
3 cloves garlic, chopped
1 teaspoon turmeric
1 teaspoon poultry seasoning
6 cups chicken broth
1 (13.5-ounce) can coconut milk
1 1/4 pounds chicken breasts (about 2 medium sized ones), cooked and shredded
1 (10-ounce) bag frozen peas (optional)
1/4 cup chopped fresh parsley
1/2 teaspoon black pepper
Instructions:
Heat olive oil over medium heat in a large soup pot.
Add diced onions, leeks, carrots, celery and 1 teaspoon of kosher salt.
Sauté, stirring occasionally, about 14-16 minutes.
Stir in the chopped garlic, turmeric, and poultry seasoning, and sauté for an additional 2-3 minutes, stirring frequently, until the garlic and spices are fragrant.
Pour in the chicken broth and coconut milk.
Add in the shredded chicken.
Bring to a boil.
Boil for about 15-20 minutes, stirring occasionally. Be careful not to let the soup boil too vigorously to avoid curdling the coconut milk.
Add peas and parsley.
Cook for about 5 more minutes until the peas are bright green and tender.
Serve garnished with extra parsley if desired.
