Tried this today and very pleased. If anyone wonders, this is not an indulgent cake, more of a snack or a breakfast option. Blending was messy and annoying, otherwise quite straightforward. I will be making this again. Thanks for this healthy vegan recipe.

haha this is almost the same way I make my heavenly healthy raw cookie dough balls! I swap the peanut butter for PB2 (the LOW fat peanut butter powder) & leave out the baking powder & salt. I add a spoonful of vanilla & 3 raw carrots (cos why not!) Roll them into balls. Hide them in freezer. Take one or two (or 5) down when I want a sweet treat! Now im gonna try them as brownies!

I love the idea! I also make energy balls and pop them in the freezer. Then, when I am craving something sweet, I always have something on hand.

For me cinnamon replaces vanilla!!! And for hard days the eeward is adding décadent capoucinopowder or ground matchapowder or some ground Earl grey to boost concentration ;-) Your grated cartot is wonderful vital element, tx

I don't grate the carrot. I just chop into quarters & toss in the vitamix with all the other ingreds😍 ( im always hiding veggies in everything I make....even if Im only hiding them from myself🤣) ps...gonna try your cinnamon too!@@PS-bs8oe

No. You need to look for certified gluten-free oats/oat flour.

I would still rinse the chickpeas because otherwise they are more likely to cause gas and bloating:)

Dates are a whole food, sugar is a refined food. Stop the stupidity. Stop calling all sweet foods “sugar”

You can buy fresh ground peanut butter that is just peanuts. Dates are a whole food with fiber and many good nutrients.

Not all sugars are created equal. Natural sugars (fruits, honey, maple syrup, etc) will NOT spike glucose levels and are full of healthy benefits!

don't think they look particularly good. maybe smaller dish to make them bigger. what's the odds on my buying every one of those ingredients already to do some baking. made me laugh. so maybe ill try them. enjoyed reading every ones extra tips. here's another one. they just found out that the water from the tin of chickpeas can be whipped up to make meringue.supposed to be better than the real thing. Google recipe for instructions. that's what i bought the chickpeas for. just to try it, so now can use the peas as well

❤people who have food allergies, intolerances, etc. have known about aquafaba aka chickpea brine for ages. it can be a bit of a learning curve with aquafaba for sweeter things. For making mayo, or as an egg substitute for savory dishes it is easier than making whipped topping or meringue, in my opinion. Folks who are forced to use food substitutes because of health conditions have more of an investiment, so to speak, in learning alternative ways to make food that may have been their favorite foods or treats once upon a time. You do not necessarily need canned legumes for the brine. If you get to the "I'm going to make my own legumes" level, you can save that, too. You can freeze canned or pressure cooked legume brine in ice cube or cupcake trays & then bag & label for future recipes. Same with the pulp from DIY nut & seed milk. This also stretches your food dollar. ie: canned beans could equal hummus/soup/etc + egg substitute. 1 cup of almonds could equal about a quart of milk + "flour" for your future baked goods or even a soup thickener. What seems like a stupid & odd idea to one could be a staple to another person who has to (or wants to) live outside of pre-packaged food. ❤

​@@terredee yup! I started doing that about 2 years ago. (1) 15 oz can usually has about 1/4 cup of aquafaba in it. That's usually the amount for making vegan mayo & some other condiments. See Wil Yeung's channel, Yeungman Cooking for his chickpea mayo recipe. I just started making Cheap Lazy Vegan's Just Egg recipe using aquafaba & it's worked well for batches 1 & 2. If you freeze it, it will separate the same as in the can on your counter. When you thaw it out, you just need to swirl the bowl or use a fork to mix it up. If you're going to be using any type of blender, that will do the job way better to get soft or even hard peaks like with meringue.
