Chickpea "tuna" could use a tune-up....I'm thinking curried with slivered almonds and grapes or some other sweet and savory combo? The standard Tofu Scramble could use some help, too...you are just the chef to do it!

I tried this recipe. I don't know what went wrong, but the outer ones came out hard as rocks and the inner ones are barely cooked. They're also super greasy. I followed the recipe exactly, using a kitchen scale, but ended up having to bake them for at least an hour. I'm so sad! 😭

Hi there, Some of the reasons why that may occur is the consistency of the mixture and the type of settings (lower element with fan settings can burn the outside faster as opposed to using lower element alone and then upper element). I do highly recommend to be careful when baking with items containing 'yeast', as the yeast gems will have to be killed. People ask for substitutions for different reasons. I don't really have access to many ingredients, especially vegan, so I need to know if I can use something else. I bet it's the same for many people - and that's not including people who have dietary restrictions or autoimmune diseases like celiac. Just be more understanding.

Made these last night for my non-vegan family. They were absolutely delicious! Look exactly like “regular” brownies with the glazed crackly top. Even without espresso powder they were decadent! I would hands down agree.. THE BEST vegan brownies!!

As touching on the 'you only live once mentality', i would not recommend to adopt it in that manner as 'doing as thou wilt' can lead to an early grave, thus robbing the world of the good that you would have done. Not only that, but what about family members e.g grandsons and granddaughters, who would love to see or spend time with the person who has robbed years of their life by going to an early grave? We made these this weekend. They were EASILY the BEST brownies I've ever had in my life. And I should know. I'm a chocoloholic. To say that I LOVE them would be an understatement. for the "can i use this instead of this" kind of people, i've tried this recipe following the exact same ingredients and i've tried it switching the AP flour for oat flour (i can't have gluten anymore) and although it's still tasted delicious and it was fudgy and moist, the shiny crust on top wasn't there anymore which is something that makes this brownies so unique. So if u can't have gluten i highly suggest u try this recipe, but don't expect it to look exactly like the one with AP flour.

Oat flour is probably too granular, maybe something like a mix of rice and corn flour would work, and maybe mix in just a little bit of pea protein to simulate the gluten in wheat flour without actually having gluten.

I live in England and all the cocoa powder here is DARK. I have never seen faded away cocoa powder. I even lived around asia for many years and I only ever saw DARK powder. I'm also worried to have the american powder, Lol The only thing I can think of is if its DRINKING CHOCOLATE POWDER. because this is mixed with milk powder and sugar.... often used in cafe's or cheap supermarket powders. But that would not be considered as pure cocoa powder.

Ok so I made these 2 days ago as we had office browny baking competition. As I am a black sheep vegan in office was not sure if to do it. But baked them and served with option of warm strawberry chia jam or cold vegan whipped cream…pastry chefs from our company hotels were judges, and….they liked it , I won at my own shock….but that doesn’t matter, whoever tried them said they were yummy

Made these for a picnic and they were demolished by non-vegan friends! Its so good to know I don't have to sacrifice any taste going vegan :) Just a note, I think I overcooked them the tiniest bit as I used a fan oven (they were done in 25min) so may be worth noting this in the written recipe!

Thank you so much for your recipes. I recently found out I'm so sensitive, pretty much every common ingredient in every thing we use, eat and drink is what made me sick and in pain pretty much since I was born. And why I have so many adverse reactions to so many medications. Being a vegetarian for over 30 years, it was easy going vegan after finding out I'm allergic to the proteins and the sugars in milk, so no more dairy. Gluten was difficult to give up, but I did it. A few months ago I learned I have to get away from processed foods, even the ones deemed vegan-glutenfree-organic. Most products are made in the same facility as these ingredients, so even the tiny amounts are harming me. The doctor was right. It's been about 2 months now of me cooking everything from scratch, from pure ingredients that meet my ridiculously long safety list. Creators like you have helped me so much. Saved me really. My food allergies are coconut, oats, almonds, dairy, eggs, asparagus, meats, cabbage, wheat, gluten, peanuts. Finding gluten-free vegan recipes without coconut, almonds or oats was a struggle. Thank you and all the other amazing creators on here for all of your time and effort to share these delicious recipes. I'm sorry if it's difficult to read. STBI survivor. 💞

protip: if you follow Nisha's recipe for making hummus (which I did this week and it was easily the best hummus I've ever had in my life), you can make your own aquafaba by reserving the chickpea water and cooking it down a bit until it's thicker. Since you add baking soda to that water when cooking, do you think it'd make the brownies fluff up even more? Really looking forward to trying this recipe. Thanks so much for making all of these!

Have you seen sugarologie’s video about brownie science? It’s so cool that you got the shine on the top because your whipped the sugar with the Aquafaba. She mentions that’s it’s probably a sheen from the sugar and it won’t shine if the sugar wasn’t dissolved well.

Hey Nisha! At 3:43 you mentioned how doing that step helped get that crinkly top. There's a channel on youtube called Adam Ragusea where he actually works with a food scientist to get to the bottom of why and how to get a crinkly top like that. He has a two part series and the part where he explains how to get it (including his MANY test bakes to get it right) and you can look up his video called "How to give brownies a smooth, glossy top" where he explains that it's the dissolving of sugars that causes that to happen. Maybe next time you experiment you could try using powdered sugar or grinding up some sugar in a spice grinder to see if that affects it at all. Either way, this is a great recipe, keep up the awesome work!

Hey Nisha, I've made these brownies several times and they're the absolute best. After years of being disappointed by mediocre Google search result recipes that claim to be the "best ever", yours has me feeling like Gordon Ramsay ("delicious, finally some good f*cking food"). But now I want to make these into cool funky brownies that give you a good time. How would you go about doing that? Should I use vegan cannabutter instead of regular vegan butter? Or just add CBD oil? Is it a bad idea to do this to your recipe in the first place?

THE BEST BROWNIES i've ever tasted! Great recipe and thank you so much! Also I swapper the vegan butter with 1/4 cup refined coconut oil (no coconut smell) + 1/4 cup regular vegetable oil. It turned out the same way with a flaky crust, so if someone is out of vegan butter, like me, you can try this too!

I'm into real easy recipes with just a few ingredients. For chocolat/brownies. I take 1 cup of walnuts or hazelnuts, 1 cup of dates and 1/4 cup of cacao powder. Mix it, add a few drops of water so it sticks together nicely and make 1 inch balls. The whole family loves them.

OMG these are the best brownies I have ever made, non-vegan brownies from the past included. You cannot tell these are vegan AT ALL. They are so rich and dense and delicious + easy to make. This will be my new go to brownie recipe! And as a student without a mixer, whipping the aquafaba was a good workout haha. Thanks so much

You really gotta leave time to have these brownies set. I let them cool for about 1 hour after baking and I thought they were decent. But I left the rest to sit overnight for 12 hours and WOW. They were absolutely perfect.

Made this yesterday and I'm blown away abut how good this taste. I'm vegan almost 1 year now and I'm pretty good with cooking but this is the most delicoius brownie ever. Thank you so much! I made this recipe with refined coconut oil instead of vegan butter and it came out amazing! Disclaimer: I never tried the vegan butter version, so they can be even better!

Goodful did a video where Merle tried 3 different brownies; a 10 min, a 1 hr and a 1 day. Have you tried any of those? I haven't but the 1 day brownie looked Goooood... but it takes ONE daaaay. Who wants to wait that long to get their chocolate fix. Am I right, am I right...

I tried the middle one, made with pumpkin purée, and I don’t love it. I made it three times in short succession, trying to get the texture right. As written, it doesn’t have enough structure and was sticky and dense. It also has to be made with natural process cocoa powder because it uses a chemical leavener. I tried baking it longer, adding more flour, adding additional leavening, and finally gave up. I love the idea of pumpkin purée as a base, and perhaps aquafaba would make it work better. I just tried an America’s Test Kitchen recipe yesterday that has almost identical ingredients to Nisha’s recipe, and it was light years better. Can’t wait to try hers as well, as it has less oil.

Wanted to clarify to say that the ATK recipe was light years better than the 1-hour brownie recipe with the pumpkin base, not than Nisha's recipe, which I haven't tried but look forward to. Oops! Also, Matthew, the ATK recipe came from "Vegan for Everybody." which is a great resource for recipes but also for understanding why certain ingredients work better than others in adapting non-vegan recipes.

These are fantastic! Can I say that they are not just the best vegan brownies but perhaps the best homemade brownies? We are not vegan, but we are GF - I made these with Bob's Red Mill GF brownies and they were excellent! The aquafaba does something magical to the texture. We all fell in love with them! Note that if you put them in the fridge they do get kind of hard and way too fudgey (rather than chewy), probably because of all the melted chocolate. So just FYI. SO GOOD. I have a friend with an egg allergy and we have the hardest time finding good egg-free desserts. Thanks Visha!

As someone else said below - I did have to bake these way way longer than the recipe stated. I assume this is because I changed out the flour. So if you do make these GF just be use all your senses and your toothpick to check for doneness.
