Chickpea masala salad- a protein-rich quick and easy salad loaded with vegetables, flavoured with Indian spices and olive dressing.
This simple salad is so filling and satisfying that it can be enjoyed as a meal
Recipe ( Serves 2-3)
1.5 cup boiled chickpeas
1/2 cup diced cucumber
1/2 cup grated carrot
1/2 cup bell pepper
1 small onion
1/4 cup coriander chopped
1 tsp chilli powder
1/2 tsp coriander powder
1 tsp cumin powder
Salt as per taste
1-2 tsp oil
Salad dressing
1 1/2 tbsp olive oil
1 whole lime juiced
1 tsp honey
1/2 tsp kashmiri chilli powder
Salt as per taste
Start by heating oil in a pan and toss in the cooked chickpeas. Sauté for 2 mins and add in all the masalas. Sauté for 2-3 minutes or until the chickpeas look roasted.
Into a bowl, add all the chopped veggies along with the chickpeas and pour the salad dressing (olive oil, lemon juice, honey, chilli powder and salt )
Combine them well and serve on a bed of lettuce or just by itself.
