you can peel off the tough skin with a good peeler that peels thin! Bell Peppers are more digestible without the skin and sweeter.This I learned in culinary school.

Loved this great twist on a classic! Worked overtime today, and getting my house ready for weekend guests, I threw this together last minute (added cucumbers), and it was outstanding!! It's so easy, and I make similar dishes all the time, but this was a great variation. I'm going to feed leftovers to my weekend guests! Thank you so much!
