A tablespoon of balsamic or red wine vinegar really sets this off!!! Slice the red onions as thin as you can and they are not strong, just flavorful!

This looks so good, and I love chickpeas. But, I can’t eat tomatoes. Any thoughts on what I can substitute? I have to be mindful of acidity, which does make it very difficult to use good flavors.

I'm not too good with lots of tomatoes, but definitely find baby plums are the best. For the same colour group I would use vacuum packed cooked beetroot. Or fresh cooked in Summer.

I made a version that's even more simple: replace the sauce with store-bought dressing. Now it takes about 5 minutes to make. Ok, to be even more lazy, use store dry parsley
