Chickpea Scramble with Roz Purcell

We visited our friend Roz this week to get some amazing breakfast inspo. She showed us know to make her super easy and accessible Chickpea Scramble. Blown away by how easy it is, it only took 2 minutes and it'll set you up for the day and can be customised with any flavours you want. A street food in Trinidad, in the Caribbean is called Doubles - is made of curried chickpeas served between two light, fluffy flatbread called Bara and your choice of spicy, tangy or sweet toppings - sold for pennies on the streets every morning, traditionally as an inexpensive for breakfast, but becoming available all day round lately! Looks yummy! I make something similar using chickpea flour mixed with water and loads of veg. From your quiche /omelette recipe, just scramble it up as I have yet to perfect the omelette technique. Usually top with hot sauce and hummus!

You can make it take like hummus. The flavours in hummus are a bit more muted, depending on the flavour because it's all blended together. You you make this with some fried onion or Moroccan spices it'd definitely be going down the hummus route. 😄😄

Great recipe and good to have a special guest. The only thing I wouldn't add is the oil because research has shown that oil isn't too good for you. So I try to avoid oil but get my fats from whole nut's, seeds, coconut and avacado.

Fair play, David. Yeah oil wouldn't be good if you had too much of it for sure. Too many good fats can be bad too but I'm sure you're on top of it. 😄😄

The water in the tin is full of a chemical thar causes flatance. Rinse them until they stop bubbling and you’ll be grand 👍🏻
