That looks amazing! I like the velvet red chili sauce color only to be outdone by braising meat in it! There is a Mexican market/restaurant here in Schenectady, NY (owner grew up in Mexico) that serves fabulous tacos and one of them is filled with beef cheek.

Awesome. I was born in Phoenix AZ, and my grandfather owned 2 bar and grills in Casa Grande, which is a hop, skip and a jump from Mexico so, I was raised on Mexican food. You can trust these recipes. 😜🍻

If you make this with chicken, do you still let it simmer for two hours?

Just like beef, it gets more tender, absorbs more flavor and the sauce reduces to the proper thickness and flavor, with the added meat, as well. So, technically, you don't have to wait 2 hours for the beef to cook(or chicken) but you should. 😊 🍻
