Yes we have to! Roughly 10-15mins in hot water will do fine :)

Looks so delicious. Meatman, can I take a shortcut with the chilli paste? like using Lao Gan Ma chilli instead of preparing it, though I must admit that your homemade chilli paste is so much more delicious, less oil and healthier.

Hmm we have never tried that before, not sure how it would taste. But if you love Lao Gan Ma chilli, it is certainly a viable substitution :)

You can buy readymade sambal dried chili with shrimp flavour, depends on where you live . But never never substitute with 老干妈。It will spoil the flavour - its simply not the same.

To substitute the umami flavours of belacan, we would recommend fish sauce or dark miso paste. But ultimately, these products aren't the same and the taste might differ slightly due to their base components :(
