I agree. The only thing I would add is that the cigarette dangling from the chef mouth would sometimes drop ashes into the fried rice. Tasted great.

@noodles Jimmy's not wrong. I worked under a Cantonese chef for some years. We smoked cigarettes, and sometimes joints, while out of customer view in the back doing prep a few feet from customers, but the hood vents took care of that. The lead cook was super laid back, and smoked while cooking as long as people weren't inside. What makes many asian cooking styles so fast is that everything is cut to bite size pieces so that it cooks fast and so that you don't need a knife, considered a tool of violence, at the table. I might be rambling. . .

I am a Chinese takeaway chef, not smoking though. I am the younger generation, I do most swear in English, when the shop getting really busy and mistakes were made, I began to swear in mandarin or my hometown dialect 😂😂

He is still to this day one of the coolest, most interesting people I've ever met and it's been 25 years since I last saw him.

I was a delivery driver for a local Chinese restaurant. The owner and his wife were actual Chinese immigrants. They were so nice to me God bless them but their accent was so thick I could hardly understand a word they said to me. Food was excellent and it was just the dude his wife, me, and occasionally another guy in the back to like wash dishes and mop and whatnot. Their 11 year old son would take orders at the counter.

True story, we finally got decent Sichuan food in my midsized German city about 4 years ago. The menu is amazing, my favorites are 干煸四季豆,红烧茄子,some kind of 土豆丝 and of course 麻婆豆腐。 Chef is skinny old dude in wife beater who only speaks Chinese and works like 5 pans at once, while smoking. 😂

My family’s restaurant became locally famous because of his gorgeous cooking and he didn’t have a single ounce of training. He was just naturally talented and knew what worked and was completely self taught and his food was still more delicious than all those Michelin stars. well the 30s fried rice or other simple plate are pre-prepared, its a normal thing in mainland china too, you need to do all the wash/peel/chop/marinate/stew early in the morning, it takes you so much time, many good restaurant start from 4-6 am for buying fresh meat/fish and do the preparation ... So when the ppl are coming and ordering food you can just focus on stir-frying, and thats the whole point to be a chef, you feed these hungry MF asap so they are happy to pay you.

There was a Chinese restaurant in my home town (Salina, Ks) when I was a kid and the chef was always screaming and pans would be flying, dishes would be breaking but the food was some of the BEST Chinese food I've ever eaten. It was a little hole in the wall place too, the bench seats were ripped, there was gum all up under the tables, but the food. OMG. It was amazing. Haven't have a decent eggroll and sweet n sour sauce (not that red shit) in ages. Their sweet n sour sauce was golden in color, oh man, liquid gold and tasted like honey dipped goodness. They went under when I was around 10 yrs old. Haven't had a good Chinese dinner like that in almost 30 years now.

There is a Chinese restaurant nearby my grandparents house that I would usually visit when I lived with my grandparents. Anytime Id go there they had a school aged girl doing her homework or whatever at the register who spoke fluent Chinese and english. The food was mad cheap and it was a lot of food. She would take my order and sometimes five minutes after I sit down that shit was already being taken to my table. Steaming and hot and fresh. Only reason I wanna learn Chinese cooking is to pull that shit off on busy days
