There's not that much to criticize about how Jimmy made his fried rice. Most Asians (incl. myself) are taught at least one way to make it growing up. Fried rice isn't tricky, and there is a lot of variation in techniques, so it's actually stunning to watch Jamie Oliver fuck it up so badly.

I live in Asia, and tried out this recipe with what I had in the kitchen. Switched out the bacon with pork belly slices, and curry powder with pepper and five spice powder, peppers with fresh chilli. Wife liked it, she said it was a nice home-cooked meal. Props to you Jimmy.

Huge fan of Uncle Roger and Jimmy - esp I'm from Hong Kong, great to see Jimmy as such a great representation of HK. One thing about the soy sauce though (as a home cook for > 10 years) - soy sauce has sugar in it so can be easily burnt, therefore you don't want very high heat on soy sauce. Burning soy sauce for too long will also make it turn slightly acidic, destroying the umami flavor in it.

look. as an asian with a lifelong love for fried rice. if there's any advice i can give yall it's this: the rice cooker you use *matters*. especially if you don't have time, a nice rice cooker becomes the best and most-loved appliance in the kitchen because it always makes god tier rice. don't know where to start? btw the best rice cookers in the world are the ones that speak korean at you and sing a little song when the rice is done cooking. the rice is fluffy and beautiful. and you can make *pancakes* in that shit.
