Good tip to separate egg whites from the yolk just pour the whole thing in a bowl then get a water bottle (empty) squeeze it then place it over the yolk and it sucks it right up leaving the whites nothing wasted !!!!!

My family was just baking CNY pineapple cookies yesterday! the method of folding Fortune cookies is almost like making Kuih Kapit ( Peranakan Chinese Love Letters) with egg and coconut milk batter (very heavenly!) and needs to bake over charcoal stove...so fortune cookies seems so much easier....Happy Chinese New Year Sorted!

A really easy way of folding them is to fold them in half and then get a mug and bend the middle of the crease on the top of the mug (if you understand that) and then place them in a muffin tin to hold the shape while they harden.

Fortune cookies are actually of Japanese origins. In Kyoto they make O-mikuji cookies, with fortunes placed in the folds of miso-sesame cookies. Japanese immigrants brought them to America, where they became popular in Japanese bakeries. However, when Japanese Americans were forced into internment camps during WWII, the Chinese Americans saw a market to be filled, and we in America have been eating fortune cookies at Chinese restaurants ever since!
