Chinese Salt and Pepper Squid | Fried Calamari Recipe | ASMR

Here is my take on some really crispy garlicky salt and pepper squid. The recipe also has a hint of heat that comes from Thai chilis and is topped with lime juice to add a little bit of zest. Enjoy!
INGREDIENTS
3 cloves of Garlic
(2 tsp | 5 g ) + (1 tsp | 2.5g ) White Pepper
(1 tsp |6 g )x 2 Salt
1/2 tsp | 1 g Black pepper
2 Scallions
1 Small Red Pepper
1 Ibs | 453 g squid
2 bird’s eye chilis or Thai red chilis
1 Egg
2 tbsp | 16 g Cornstarch, potato starch or Rice Flour
1.5 Cup | 200 g Cornstarch extra to coat
2 tbsp | 30 mL Cooking wine (preferrable Shaoxing) or Sake
Canola Oil or Vegetable oil for deep frying
TIPS:
Feel free to COMBINE potato starch, rice flour and cornstarch in a 1:1:1 ratio. I find that having a mixed composition of different flours adds to a more complex texture and even crispier bite!

This is simply perfect and delicious and in the same time this recipe is looking incredibly delicious and mouthwatering. Something I would love to try. Looks delicious. Love the knife you have. Calamari is one of my favorites. I am sure it is nice with the bird's eye chili in it (Thai chilis) in it. Watched all. Stay connected.

thanks! the knife is a Shun, its the blonde classic chef knife. Probably my favorite very razor sharp. The thai chilis definitely add a nice kick of heat!

Should blend the salt and pepper and then sprinkle that on the squid to get a more even coating .

Go watch some videos on how to properly use a chef knife. This bell pepper, green onions and chili pepper cutting was painful to watch, you're not even using your blade, stop pushing and start sliding. This is not an ax, it's a knife. The tip of the knife should stay on the board and the knife should move like the wheel of a locomotive I'm not saying that condescendingly, more in an educational way. The recipe looks very good.

@@savored it wasn't unbearable, just uncomfortable. Just watch the part where you're cutting the red bell pepper, you're just pushing down, no horizontal movement. But the blade is 8 inches long...there's a reason. Cut, don't push.

@@lindseymassaro5483 what a useless comment. What's the purpose of it, do you feel smart for writing it? I hope not because it's one of the most moronic and pointless comment I've seen on YT. Lot of time on my hand? It took me what, 1 minute to write? How much time do you need to write 100 words? My Michelin star? How childish, unoriginal and shallow are you... Do you need to be a Nobel price recipient to tell someone how to do 11x15? Do you need to be a Formula 1 champion racer to give advice on someone's driving? I've been working 17 years in restaurants, starting in pizzerias as a dishwasher eventually reaching executive chef in a fine dinning place. I managed to go up the ladder feeding on knowledge and instructions like these from the more experienced peers, that's what cooking is all about. So I ask again, what was the purpose of your comment and did it make you or anyone else better? And by the way it took more or less 4 minutes for me to write this. It's not that hard writing something with content and intention, you should try it, if you're capable of such thing.
