Wally the one tip I got that worked really well was to add a little bit of chicken bouillon powder in your spice mix for really good salt and pepper

Singaporean style is Tapioca + corn Hong Kong Cantonese style is potato starch and baking powder Chinese restaurant style is raising flour + corn flour All are crunchy and delicious, depends on your taste
