INGREDIENTS:
* 8 cups of day old cooked rice (cooked in a rice cooker. With a pinch of salt, and turmeric. Added a tbsp of cooking oil.
* 1 cup each chopped carrots, red bell pepper, onion, and green peas
* Stir fry sauce: combine in a bowl, 1 tbsp each of dark, and light soy sauce, oyster sauce, 1/2 tsp toasted sesame oil. Heat up 2 tbsp cooking oil, add 1/4 cup chopped white scallions, ginger, 3 tbsp chopped Serrano chilis, and optional 1 tbsp chopped Fresno chili, and 1 tbsp minced garlic.
* add 1 tsp of Shrimp powder or 1/2 tsp msg/ 1 chicken or vegetable bouillon cube
* 28 jumbo shrimps, seasoned lightly with salt and crushed pepper, and stir fry 2 mins on each side on screaming high heat.
* 4 eggs scrambled and lightly seasoned with salt
* Combine all cooked components in the wok, and add a final touch of chopped green scallions and a pinch of white pepper.
