It seems the genius idea is instead of baking moisture out in a dry oven it cooks while maintaining the moist environment leaving it the most moist it can be!

I’m curious; they look more dense than baked cupcakes? Less crumble too? Great idea for those who don’t have an oven!

Steaming uses moist heat to cook the cupcakes, so the result is moist and less crumbly. Baking uses dry heat to cook the cupcakes, and it requires more fat to rise and expand, so the result could be more fluffy and crumbly. I hope this helps. ☺️

Could I use a bamboo steamer instead of pot/towel method that you did?

If you have a bamboo steamer to fit all the cupcakes, that will be great. The lid of the bamboo steamer should absorb most of the moisture, so there wouldn’t be a lot of water droplets.
