A very warm welcome back to What’s For Tea :) Today I made this amazing potato fritters! An absolute chip-shop classic! Thick fluffy sliced potato surrounded by a crunchy beer batter…these are so delicious! Perfect to eat on their own but often accompanied by battered fish or as I’m doing, in a white buttered roll with brown sauce! :)

What you’ll need (Makes 6 flitters)
2 Large potatoes (baking potato size) peeled & thickly sliced
113g/4oz Plain (all purpose) flour
50ml/1.6floz Olive oil
25ml/0.8floz Water
125ml/4.2floz Beer or fizzy (carbonated) water
1/2 Teaspoon salt
Vegetable oil for deep frying your fritters

Cheryl when I was a kid in Liverpool they sold these in the chippys.......they were called scallops then, and still are! (nothing to do with the seafood scallop) And yeah, they are great with brown sauce!

My Dad made these every week in ‘60’s for us. He called them ‘snacks’ then. Love them I always remember my Dad when I eat them.

We are a US transplanted family from Greenock and my mom made these as a treat. But she called them “snacks”. She used self rising flour and just water, no beer. But they were soooo good and we LOVED when she made these. Thank you for the wonderful memories 🥰. I might have to give them a go again. 😋. Love your channel! ❤️

Add one tablespoon of olive oil and make sure the water is sparkling water makes the fluffy and light xo

Thank you for these videos, My great nan passed before I got her recipes. She never wrote them down. I may live stateside, but I grew up eating scottish food and this is giving me a chance to rebuild what she taught me.

Strange! I went to a chipper in Kilkenny once and asked for some scallops and she looked at me like I’d ten heads! I then assumed scallops were something only in Waterford! 🤣 good to know it was her that was the weirdo haha

Used to make these all the time, putting on paper towels to drain and son would be eating them faster than I could make them ! Made corned beef fritters too! Really good!

Wow, thank you for this video! It’s brought back memories of my nana making these for me when I was younger. My Nana inspired me to cook and I am now chef in the West Midlands having moved from Glasgow in 2011. You’ve really cheered me up with this video thank you, keep safe 😀😀

Sue Whitty ..... make potato rissoles ... used mashed potato, plain no butter or milk , mash really well ! Chill in fridge then form into logs and roll in fish dressing think it was paxo ? Orange color .....bake in a 350 oven until golden and firm ! Made some for grandkids recently they loved them ! Used left over mashed potatoes , ( it did have butter ). Turned out fine ! Make salmon cakes mixing in salmon to potato but no butter ! Form into patties , chill , dip in fish dressing or fine breadcrumbs and bake on parchment paper. ...350.

*@**2:46** "BROWN SAUCE" As an Australian, I have never been able to figure out brown sauce. With tomato sauce, we at least know that it's meant to be made from tomatoes. With brown sauce, it's a mystery as to which brown items it originated from... a mystery I'm not willing to taste test!* 🤷🏻‍♀️

I remember being 13 years old , my friends and I would sell our dinner tokens on a Friday then climb over the school fence to buy chips and or potato fritters from the chippy....I always got the potato fritters.

I moved from Scotland to Australia 40 odd years ago. I remember looking and wondering at all the weird things the Australians ate, like dim sums, chiko rolls (they’re beyond vile’), and potatoes cakes - sold then and to this Day in every fish and chips shop, and identical to a tattie fritter in every way. But I’ve no memory of potato cakes / tatie fritters being a thing in Scotland pre ‘81 when I still lived there , so did Scotland borrow the idea from the colonies?😉

Potatoes are among my favourite foods. Even a simple jacket potato with butter brings a smile. But the fish shop chips of my childhood, wrapped in newsprint, with malt vinegar, were just heaven. These look definitely worth making.

They're only called Potato Scallops in certain parts of Australia, in South Australia they are called by their correct name of Potato Fritters and in some other parts of Australia they are called Potato Cakes.

@@neilfromdownunder9204 I agree. I think the" potato scallop" is a Queensland thing. I'm in Brisbane and that is what I have called then for years. Have not recently bought them as that sort of thing is strictly off my diet.

In Australia we call them Potato Scallops (pronounced scollops). They used to be everywhere but not so much now, if you do find them at a fish and chip shop they don’t taste the same so maybe I should make some of your recipe.

Tried the recipe for the "Tattie Fritters", used fizzy water for the batter and deep fried them in Beef dripping (we're from Yorkshire). What an absolute treat, followed the recipe as on the video with my method of frying but that's a personal choice. They were fantastic, crispy on the outside, the batter was perfect and so soft on the inside. A big thanks for the KZbin video, everyone should try it, you won't be disappointed. I will try the batter with a good beer next time, just to see if they can be even better, although I doubt it. Very well done!! We love 'em.

I used to get one of these for my lunch at school sometimes instead of the healthy meal my parents had given me the money for, it meant I had egnough money left to buy a single cigarette and 3 mathches from the dodgy garage down the road! 😁 Nice video, I'm gonna re-ignight some memories 👍

My Scottish Grandfather made the best potato fritters. I haven't had them for decades because I am afraid to deep fry anything haha. You make it look so easy I might have to give them a try. He also was known for his corn fritters

Buy yourself a Fry Daddy and fry everything out on the patio with newspapers on the ground underneath. That way, your apartment doesn't smell of fried stuff, or your hair, or your clothes...OR, you could make it a community event. Get your turkey deep fryer going with the propane tank and have everyone bring all kinds of stuff to deep fry (when the current situation with Covid is over, of course).

@@mjonausk the year i turned 16 (1983) i visited a friend who had got married and moved with her pharmacist hubby who got a job in redcliffe. . she told me about some of the things like potato cake/scallops, but the one time i was out on my own was the day that local fish and chip shop was bloody shut, so i couldn't get any potato cakes. . i do remember the wanker lift operator in the brisbane town hall , who when asked for places to take a visiting victorian stated the bottom of the river. he really wasn't working in the right job.

My other half just told me that, as a kid in Yorkshire, her mum would make two of these and use them to make a fish finger butty as a special treat. Potato scallops instead of bread...hmmm, not sure about that.

Yes could also watch the potatoes going into the chipper in the store. Seems like many aussie favs originated in Scotland, including the mince beef dogs eyes!

I could sit here and listen to you speak, for hours lol I visited Scotland in 2015 - my first trip across the pond! My cousin and I were on a bus tour that went from Edinburgh all the way around and ended in Glasgow. It was the loveliest time I've ever had. I'd go back tomorrow, if I could. Your homeland is so beautiful. I hope I'll get to go back some day! I'm definitely going to try these - they look delicious!

In NSW it's scallop. But if you buy them frozen in the bag they are potato cakes.

Thank you and congratulations Cheryl! Your fabulous tattie fritters have made themselves known here in Mexico, and my wife and I are delighted. They remind us of Japanese tempura. I am a Welshman. As a kid in the 60s and 70s I´d watch my Dad fry up "scallops" - slices of potato similar to those in this video. But he didn´t make any batter for them. I´m a homebrewer so I´ll always have some nice beer to use for these. Who knows when we´ll next be able to party. But the next time my wife´s family has a Xmas knees up, I´ll be blowing them away with a giant bowlful of What´s For Tea? Tattie fritters!!! All the very best from Tepetlaoxtoc, Mexico.

We used to have these in my uncle's chippy we called them scallops. Thinly cut potato cooked in batter, yummy yum yum.

we're I was brought up we called these specials or scollops from the chippy in the northwest in Whiston Merseyside. They look lovely 👍👍👍

My wife loves potato scallops (Australia) 60 years ago in the UK she used to buy from the chippie a bag of batter scraps for a couple of pennies, best thing ever with salt and vinegar on them.

@@jovanalmen8660 Fish and Chip shop. English and more so Australians like to shorten things down. Once upon a time the scraps,burnt, overcooked bits and pieces would be sold off to kids or on occasion depending upon the owner/workers given to kids who looked like they could do with something to eat. Nanny state diplomacy now stops such practices.

Depending upon which state you live in the name varies.Once upon a time they were strictly sliced potato ,battered. Now the big commercial factories sell reconstituted mash potato pressed into scollop shape but as most people prefer the proper potato slices Fish and Chip shops will make their own or buy the now available commercial sliced ones.Years ago there were only scollops but with the introduction of a crustacean called 'a scollop' you have to ask for 'potato scollops' and ask if they have 'proper' or mash 'look a like'.

@Victor Murat You are right about the scollop being a mollusc. I made the usual mistake in crossing my vision memory with spanner crabs for some reason,I think from some very young mistake many years ago.Same outcome if you did not specify 'potato'. Seafood instead of potato battered.

I am of Mexican descent and my Gran made these with a different batter. Hers had beaten egg whites then add the yolk and fold in. Add salt and deep fry. The potatoes were similar to chile relleno. They were so delicious! Thank you for your recipes!

Oh, yes, the always unavoidable chile relleno. Had one with my dinner this evening, in fact. With chihuahua cheese oozing out......yummmylicious!

They were thinner in the chippy because they cooked them from raw, no par-boiling them.

Always remember me mammy doing these for us lot and on occasion span fritters, lovely. On my way home from school in the winter I would pop in and get a pineapple fritter to keep me warm waiting for the bus home. The best food is that you grew up on and there were no ready made meals back then, the closest was those god awful Vesta curry’s that came in a box.

I'm in the US and have never had anything like this. I have had regular potato chips (crisps) and french fries (chips). I'll have to try this recipe. My family would love it.

They look great! But if you fry them at 160C you don't need to par boil them first, same with chips.

Imagine tomato ketchup with a good amount of clove and allspice. It's tasty , I highly recommend it . HP sauce is a common brand .

It's similar to ketchup, but it's made with dates, spices and tamarind instead of tomatoes. Has a nice, tangy flavour and it's perfect with bacon.

I have always called them battered scollops and that was the same in Birmingham chippys and Waterford Ireland. never used olive oil in beer batter I will have to try that recipe sometimes put turmeric in for colour but only a very small amount so taste is not affected. Posh chip butty getting munchies now with all this talk of food!!

Brown Sauce is delish - but not widely available at smaller shops in the states. Head to a larger grocery store and you’ll probably be able to find HP Sauce in the condiment aisle, which is one of the most popular brown sauces!

For all the people watching from countries that don’t sell "chippy sauce" (like me, I’m from Scotland but live in Australia) just get some HP brown sauce or equivalent and dilute it 50\50 with the magic ingredient that makes "chippy sauce" so special…WATER! That’s right, just plain water….I spent for ever trying different types of vinegars at different concentrations until I tried just water…it really works. Enjoy.

Sorry to say this but any vegetable that grows ABOVE ground goes into boiling water...and vegetables that grow UNDER the ground (potatoes, carrots, parsnips etc) go into COLD WATER. Bring to the boil and lower heat until cooked.

Hi Cheryl. Thanks for a very simple recipe. I love potato scallops / potato cakes as they're known here in Australia 🇦🇺. I usually buy them from the fish n chippie uncooked as they are and then airfry them. Now I have a decent and simple recipe I'll try them your way. Thanks.

I can remember buying these from the chip shop as a child. I never had enough money for a portion of chips but a potato fritter was only 20p. I'd cover it in salt and vinegar, delicious.

Yummy❗ I'd add some panko/dried bread crumbs dip them after dipping in batter, add a slice of chees, & some bacon bits. Just a different taste. I love potatoes. Illinois, USA💖

Same on the Holy City Manchester. Here in Johannesburg we had a great English Chippy called Puffins in Windsor. Long gone but people would drive from all over Johannesburg to buy after.a night out.

Only a Campbell would use Broon sauce . Doubling the recipe works using dark strong beer and fried in Lard.MAGIC Thank you

If you have a recipe for Brown Sauce (the Scottish sauce mind, not HP), would be really awesome. The only time I had it was at a chippy in Glasgow and it was absolutely fantastic and they don't have it in England.

I have this problem with deep-frying: What do you do with the frying oil afterwards? To be environmentally conscious, you can't just toss it in the sink, or into the garden. So, what do you do??
