2 lb steak of choice
Salt and pepper to taste
8-12 oz Oaxaca cheese
Fajita Veggies-
1 red onion
1 green bell pepper
Salt and oregano to taste
Vinaigrette-
1 cup red vinegar
2 Tbsp honey
1/4 cup water
3 chipotles in adobo
1/3 cup oil
1 Tbsp oregano
2 tsp black pepper

This looks great. Small suggestion if you may, can you do unique Middle Eastern dishes like you did with Makloubeh? I read that New York has incredibly diverse Middle Eastern eateries that serve various types of food like Gulf Madhbi, Yemeni Saltah, or Egyptian Fateer Mshaltet. Would be nice to see you recreate / learn and teach about them!
