Chocolate and Cherries 🍒 Swiss Roll 💕 Perfect Easy Sugar-free Recipe

This easy chocolate Swiss Roll cake has a light cacao sheet, creamy filling with a touch of tangy from the sour cherries, and coated with a silky ganache. It will be the star of the show of your Valentines dinner 💝
Even if this dessert contains sour cherries, which are higher in carbohydrates than berries, there are only 1-2 cherries in a portion, it is worth the extra carbs 😄
Sugar-free, with dark chocolate 🍫 full of antioxidants, protein from the eggs 🥚, theis low carb delicious dessert it is a much healthier version of the classic Swiss Roll.
Ingredients
For the cacao sheet
1/3 cups almond flour
1/4 cup sweetener
1 tsp xanthan gum
2 Tbsp Sugar-free cacao
2 Tbsp Gluten ( use fiber flour if you are gluten-free)
4 eggs 🥚
a pinch of salt
vanilla Extract
Ganache
340 g dark chocolate 🍫 85 %
cacao
500g heavy cream
Sweetener to taste, I used 1/4 cup
1 Tbsp Brandy Vanilla Extract or just Brandy
salt to taste, but please add al list 1 pinch, I added 1/4 teaspoon
100g (about 1 cup) sour cherries 🍒
2 Tbsp sweetener
For decoration you can use edible gold like I did, some red fruits or whipped cream and red fruits.
