Chocolate Cheesecake
Ingredients:
Crumbs:
Graham cracker crumbs 215g (1 1/2 cup)
Butter melted 115g (4 oz.)
Filling:
Semi-sweet chocolate chips 425g (2 cups)
Heavy cream 192g ( 3/4 cups)
Cream cheese 689g ( 24 oz.)
Sugar 300g (1 1/4 cup)
Instant espresso powder or any strong coffee 2.5g (1 Tblspn)
Cocoa powder 7g (1 Tblspn)
sour cream 82g (1/4 cup)
Ganache Toppings:
Semi-sweet Chocolate chips 172g (3/4 cup)
Heavy cream 198g (3/4 cup)
Note:
Make sure your cream cheese and eggs are both at room temp. And keep the spees on low when mixing. Try not to add too much air into the mixtures.
