Hi Gemma! I just made these today - they turned out absolutely perfect! As a strict facto-vegetarian, it is hard for me to buy croissants outside due to the inclusion of eggs. This recipe was perfect; I swapped eggs for milk for the glaze and it yielded beautiful golden-brown croissants. Everyone at home loved it too! I'll definitely be making it again - thanks so much!

I learned that trick of grating cold butter years ago at school, when they still taught a subject called "domestic science". Always had and have great results. Taught my daughters to do it that way too. Every one loves croissants but it is a real chore especially in the African heat. Have to do most of the work very early in the morning. We don't have a/c. Will be trying this with chocolate for the family and marzipan for me. I'm so enjoying going through your videos and trying something new.

I made these and they were really good! Instead of chocolate chips... I put Nutella inside! I loved it... I also put butter inside of them and just smeared it on the dough before I rolled it up.... Tasted yum! Thank u Gemma for the recipe!

I just baked the croissants this morning, and I set my oven to "bread proof" and it only took about 1 hour to proof the croissants. I heated my oven to 450 degrees F but as soon as I put them in the oven half of the croissants got burnt. But then I lowered the temperature to 350 and they turned out great! I love this recipe!😊

I've tried above recipe, it's foolproof. Before each folding, I kept the dough in fridge for 20 minutes (it's very humid in Malaysia at the moment). The croissant come out perfect, I used honey glaze instead of egg wash. I started at night 8 and the dough rested well over night, next morning 6 proofing, 8am baking, 8.30am delicious croissant ready for our bfast.

Love this! The crust looks like a puff pastry, which means your recipe is much easier than the ones I've seen. I wish there was more chocolate in them because I love pain au chocolat and this reminds me of that, but I figure it didn't have that much chocolate because of the size you made them. Hii just a tip from a person who lives in a hot and humid region, just chill your flour and your butter in the freezer and after grating every few times just give the bowl a shake so that the butter doesn't start to stick together. I am giving this tip because when i grated the butter because of the hot climate it started sticking together even before i mixed it into the flour. So next time i tried the tip that i suggested and it worked! i hope this helps :)

Maybe it was too tight or the temperature isn’t right try lowering the temperature.

omg.. grate the frozen butter into the mixture is such a great idea, i always let my butter soften (out from the fridge) in room temperature first before i work with it, so silly -__- and im soo gonna try this recipe gemma!!

Anna Lorena Chan They were good, but they didn't turn out as soft and fluffy as I wanted it to be. Like it was perfectly cooked but then when I tasted it it was raw and I didn't want to bake it more because then it would get completely burnt!
