To those asking, I have no idea how long these keep in the fridge. They keep forever in the freezer. But, if you're making 12 at a time, I don't think shelf-life will be an issue!

For all you calorie counters such as my self, I made this and added honey roasted almonds, pecans and a few macadamia nuts, and put this into a 9x9 pan totaled 1,515 calories for the whole pan. Now. Cut that into 6 large bars? That's just about 250 calories per bar. Not too shabby.

Instead of using coconut to combine the ingredient, You can use tahini (sesame past). Tahini and dates go very well together. In middle east, tahini is not only used in savoury dishes, but is used in sweet dishes. One simple recipe, you can stuff the dates with any type of nuts (ground or whole nuts) spread some tahini one top, and you'll have an easy and healthy recipe.

This is great! I've been making these for years! There are also so many variations you can come up with using this. My favorite flavor was using Mexican vanilla extract, with cocoa powder, fresh toasted peanuts, coconut oil, and chopped up Mexican cacao nibs. To enhanced the chocolate I skip the salt and the liquid I add a splash of balsamic vinegar and dark soy sauce... it really does something!

Off topic. Working in cardiac surgery OR, it always cracking me up, whenever we have a muslim patient, scheduled for valve replacement(s). And they're opting for biological ones. Go figure :D

+mirogster either the patient doesn't know there is an alternative valve replacement or the there is no option and just with the biological one, it is okay for muslims to use the biological ones even if its origin is from the pig. This is consider as live saving and different from eating or consuming carelessly. This is the same as you take medication which can be toxic for everyone but it improve the patient health.

CJ i read that dutch-processed [ie treated with alkali] cocoa actually removes much of the flavonoids and antioxidants, so ive been trying to only buy high quality cocoa that is NOT dutch or treated with alkali...

+Boxs sugar from dates is healthier than processed cane sugar, though. i wouldn't be afraid to eat these if i were diabetic, i would just eat them in very small portions. dates offer a lot of benefits like more potassium than bananas per oz.

I just made these with my mom, so good!! The only thing was, we have a smaller food processor so the recipe itself was too big for it. The recipe is a good amount, so next time we'll split the ingredients and do two small batches so it gets mixed easier.

I love dates so much. medjool are really the only good ones. the dates in the dried fruit aisle are just not good. they're not moist and have very little flesh.

you can find the dates at middle eastern grocery stores or fruit markets. I live in Detroit, We have a lot of those here. I always see the medjool dates at these places.

May I suggest looking at Ajwa dates, they are much much cheaper. Medjool is 10$/lb, which leads to low self esteem. Ajwa is much cheaper, 3$ a lb.

Nooooo John, you've been brainwashed by the group that thinks coconut oil is good for you... It is not it's actually way too high in saturated fats,it doesn't give you any vitamins and is just crap for ingesting it. The only reason it's portrayed as healthy is because it doesn't contain cholesterol. I always substitute it for peanut oil, which does have a good balance between saturated (should be less than 1/3 of non-saturated) and non-saturated fats. Coconut oil is actually much higher (87g/100g product) in saturated fat compared to butter(51g/100g), which makes that since I'm not actually worried about my cholesterol I'd rather use butter than coconut oil, since this does give me vitamins and minerals.
