I actually took the time one Christmas to make confit fruits to give as gifts. It was A LOT of work but well worth the effort because everyone loved them so much. I did Mandarin oranges, apricots, plums, and cherries, too. So tasty!

I an currently very, very depressed and have been feeling anxious for god knows how long but watching a few of your videos helps lift a little weight. Oranges are my favorite. Okay, a couple notes after making this recipe: ➡️ Confit Orange: If you’re only making confit oranges for this recipe, 3 oranges should be enough. Even if you only pick and choose which orange slices you end up using in the tart, 3 oranges will be enough. Also, this part of the recipe takes TIME. You can’t rush it. Very time you take the oranges out of the syrup, it needs time for the sugar to get inside the peels, otherwise they’ll remain bitter. Leave for at LEAST 8 hours but it would be better if you just do each simmer a day apart. Or you can buy confit oranges and save time. ➡️ Chocolate Crust: try not to poke too large holes, because it will be hard to cover them up with the egg yolk later. I used a fork like shown in the video, but maybe my fork is too chunky? Also, when blind baking, I’m sure a lot of us don’t have pie weights. Just lay the parchment over the crust, put some rice into the dish and put another dish on top. The rice will make sure the weight is distributed evenly. You can add some rocks or something in the second dish if you want to really weigh it down. ➡️ Ganache: the amount this recipe makes is a lot. Again, if you’re only making this for the tart, you can half the recipe and still have a good amount left over ➡️ Orange Tea Jelly: definitely go with the store bought orange tea. I found the one in the video at the Asian market pretty easily, but honestly a peach tea Snapple steeped with some orange slices would be great too, and a lot more flavorful. You won’t have to add any extra sugar. Most importantly, whenever you use agar agar or gelatin, just follow the directions on the package. SPOILER ALERT 🚨: this is where I messed up. The agar agar powder I used should have only needed 5g to set 600g of liquid and I without thinking used 18g like the recipe said. I noticed way too late that the mixture was looking too thick :’( I ended up with ridiculously tough jelly. Anyways, if you’re thinking of making this recipe I hope this comes in handy! If you’re a chocolate lover this is great!

Except for the confit oranges, the rest is pretty straightforward and fast to make, I believe. I frequently do tarts - not this kind of tart, mind you - during summer, when there's a lot of fresh fruit around, and the crust is not at all that difficult to make.
