i had no idea until i watched this video that you can actually eat cherry blossoms....and apparently freeze dry AND pickle them! I feel both educated and enlightened. this tarte is like the fancy version of a little kid wanting to eat a pretty flower they saw in a field or a garden.

I make Sakura jelly every spring here in the US and all my friends love it. They think it’s a weird idea, but love the taste and color. I use plum vinegar as the acid, so it’s a little salty, too. Beautiful idea and execution!

I made this, its a light sweetness, well balanced, super floral and botanical. I also was able to get the jello to stick partially by sprinking clubs of powdered sugar on top of the wet hot chocolate

Sensei, a word of advice when working with jelly and ganache: you must make a thin layer of the jelly as cold as you can and let that set first. After that you should fill up the rest of the tart! I saw this advice in the chanel of how to cook that, I hope it helps for next time!

I’ve tried this tip before but I don’t quite do it myself because there’s a high chance of messing up the clarity of the jelly especially the how delicate the blossoms flowers are but you def can still try this by reportioning the measurements for two layers! Just a warning since I’ve messed up on a similar tart ;)
