Chole Matar Kulcha | दिल्ली बस स्टैंड वाले मटर कुलचा छोले | Street Food Recipe | Kunal Kapur Recipes

Kulcha is a popular street food & is finger-licking. Both the spiced matar & the fermented kulcha can be easily made at home. It is an excellent meal for a gathering a home.
Ingredients
For Matar
White matar (boiled) - 2 cups
Onion chopped - 3 tbsp
Tomatoes chopped - 3 tbsp
Green chilli chopped - ½ tbsp
Chilli powder - ½ tsp
Yellow chilli powder (optional) - ½ tsp
Black pepper powder - ½ tsp
Roasted cumin powder - 1 tbsp
Chaat masala - 1 tbsp
Coriander powder - 1 tbsp
Salt - to taste
Black salt - 1 tsp
Amchoor powder - 1½ tbsp
Water - a dash
Lemon - 1no
Coriander chopped - a handful
For Tawa Kulcha
Maida - 2 cups
Curd - 4 tbsp
Baking powder - 1 tsp
Baking soda - 1 tsp
Salt - 1 tsp
Butter (melted) - 4 tbsp
Water - as required
Chopped coriander - a pinch
Onion seeds (kalonji) - a pinch
Butter - to smear

I have seen stalls selling kulcha at railway stations and most places in North India but never tried or dared to eat. This is first time I have seen the recipe while I was scrolling you tube for some good recipes. I liked the way you explained. Chef,im from delhi, been staying abroad for about 22 years... missing Indian cuisine from delhi. Regarding kulcha I have seen almost all the recipies on you tube... but unfortunately no one is closer.. your bread is nice..but is not kulcha...frm childhood I ate kulcha frm street vendors.. thats different... ur bread is kind of nan or pita bread... chef ur Pindi chloe recipe was superb.. I cooked million of times.. so tasty

Hi kunal, your matara chola is the urban 5 Star type. The one you get on Delhi roads is very different they make with only masalas and garnish it with onions,dhania patta,ginger and green chillies.The matara is also very soft and gooey.

There is difrence in there chemical reaction which make baking soda sour and baking powder a simple baking soda is also use in fire extinguisher because co2 come after reaction which extinguish fire
