Another question please, I've bought silicon carbide stones from gritomatic that can be upsed up to 65 HRC, and it was mentioned not to use it on softer steel due to faster wear out. What would be the softest steel that it can be used on HRC scale for Silicon Carbide stones?

They're basicaly more multitasking compared with other kind of stones. So you can use them with soft steels as well.

Diamon knifes that come together with kadet, they're not allowed to be leveled? how long do they last? and how do I know when I need to replace them?

These stones can last from 20 to 50 knives depending on the invensity of usage. If stones do not give you the result like you can;t get the burr, or burr is not removed well. it's time to take new stones.
