Recipe ingredients
1 Kilo of Olives
50 gr. Olive oil
2 Cloves of Garlic
2 bay leaves
3 Slices of Lemon
1/2 tsp. Oregano
Prescription Process
With a smooth stone, lightly crush the olives one by one to open them
Be careful not to break the seed and melt them
We choose fresh olives without bumps, pits, etc.
We put them in a bowl of water to remove their bitter taste
We change the water 2 times a day for 7 days
The olives in the bowl must be completely covered with water
At 7 days we test if their bitter taste has gone, if
no, we leave them for a few more days
We put them in a colander, wash them and drain them
For the brine, put 1 liter of lukewarm water without chlorine in a bowl
100 gr. Coarse salt
Stir well until the salt dissolves
Place 2 cloves of garlic in a glass jar
2 Slices of Lemon
1 Bay leaf
1/2 tsp. Oregano
Add a total of 1 kg of olives
1 slice of lemon
Add the rest of the olives
Fill the jar with the brine until the olives are covered
Leave a gap above the olives and brine, to add the olive oil

After closing them, keep them in the brine for 2-3 days
We keep the jar in a dark and cool place
After 2-3 days in the brine, the olives are ready to eat
Our olives are kept for up to 3-4 months
