Your camera work has gotten so good over the years. I've loved watching you cook and hearing your soothing voice (been subscribed for a longgg time), but the images throughout these videos have gotten so clear and beautiful. Chef John, you keep making me hungry. Not a bad thing. Several years ago I had the good fortune to work on a Spanish Cable Ship based out of Curacao. We would have this dish several times and also Paella almost every Sunday. I miss those meals with the Officers aboard ship. Keep up the good work and thanks for bringing back some very good memories.

I love the idea of this dish; it's simple, looks great and (probably) tastes fantastic. My only qualm with these clam/mussel dishes is, that they don't really satisfy a proper hungry person. If I were to use this as an appetizer (or in combination with pasta) would you have any suggestions on a complimentary entree?

Do you mean Linguica? Chourico is really just the Portuguese word for Chorizo, and even if it's made in Portugal, it's really just a replicate of the classic style/recipe originating in Spain. Don't get me wrong though; I love Linguica, but both are very different. Linguica has a distinct anise flavor with coarser chunks of pork and is often milder (although I've seen spicy variations), while Spanish Chorizo is more garlicky, peppery, and spicier, while also a redder in color. (One thing to note: In Brazil, Linguica is the word used when referring to Chorizo; while Chourico is used when referring to Morcilla, which is a blood sausage known throughout the rest of Latin America.)

I think he used Mexican soft chorizo. Not as good as the hard ones you're used to from Spain.

Chef John could you do a Lima Bean recipe? My parents always made slow cooked Lima Beans with smoked turkey legs/ham hocks and seasoning during the winter. It was cheap and easy and it kept me warm. Black eyed peas also work.
