I have enjoyed your videos for a long time. Thank you. Question: Why did you steam and then boil the noodles? Does that create a certain kind of texture?

purrmeow Utah because the noodle is supposed to remain chewy when the cooking is finished. steam the noodle first can shorten the boil time, and this kind of noodle is easily getting too soft and moisture unlike spegatti noodle can endure long time boiling.

Interesting. I like the vegetable. It had a different name in my place though. People here just call it petsay.
