Ms. Chris you remind me of my mother who was an amazing cook. I was very young, but I still remember her traveling from Florida to Maryland to make extra money during the summer months by cooking for the wealthy; her food was just that good. I also remember sitting at the kitchen table watching dinner being prepared and boy was that food good too. I struggle with her passing, especially during the holidays since she was my taste tester. I appreciate your videos because you inspire me, and in some odd way I feel a connection to the way things used to be when watching your tutorials. Mufyne ......I watch MsChris and I remember my Aunt and Greatgranny. My Aunt had 10 kids and she was one of the best cooks I know. We would go to the local market and ask the butcher for a family pack of chicken backs ( yes chicken backs) and she would make a big pot of chicken and dumplings and feed her family of 12, my family of 7 and any hungry stragglers in the neighborhood and we ate good!!! You would be surprised at how much meat the butcher was throwing away with those backs. Get wise young people, learn from these mothers like MsChris and cook healthy and thrifty meals for your families.💖💖💖💖💖💖

Chris, I'm so thankful that I came across this video of you and your cousin. This is special for me as I have SCD (Sickle Cell Anemia) and I 'm on blood thinners for the rest of my life so vitamin K, which is high in lots of the vegetable and fruit we enjoy. So, when I saw the cabbage and greens I can eat more cabbage and only one cup of greens (due to vit K). Now that is some good cooking!!!! I cook a cabbage and collard dish also. I use Godshall's maple smoked turkey bacon and smoked turkey wings, turkey tails or turkey necks. My husbands maternal grandmother who was originally from Alabama used to make this for us in Pittsburgh, PA. I saw her doing this one day and thought she was losing her mind but my husband told me she was expanding the greens because she felt there might not be enough for dinner. Let me tell you, those collards and cabbage leaves were absolutely delicious! The flavor was set off!

The crazy thing is if you didn’t add the sugar and replaced it with Stevia this will be so healthy with all that healthy fat. Sugar (carbs) and fat do not mix that’s what causes your arteries to clog and kills you. I will be making a keto version of this probably next week already have my ham hock my college greens I just need my cabbage and my bell peppers I might even grate medium tomato and throw it in there. you would be surprise I made greens with grated tomato in it and it is so good. it just adds extra flavor to the stock.

Sugar does NOT clog your arteries. Oh and I studied nutrition for a nursing degree. It requires study of physiology and chemistry. So now, tell me how mixing any beet sugar or cane sugar with a fat CAUSES clogged arteries. I'll wait. Oh and an entire 10 gallon pot with 1/2 c of sugar means you got probably 1/16th of a teaspoon if that. The bacon fat is worse than the sugar. But we don't consume bacon fat every meal. So if you're a paranoid person, go ahead and use Stevia, grow it in your garden, I do to make lemonade instead of the frozen concentrate that uses corn syrup which is worse than beets. lol

Chris I made these greens for Christmas 2017. and they were the best greens I've ever made and tasted. so good. the cabbage is nice and mild and mellows the collards. I didn't even need the sugar. I decided to subscribe because even though I like to think of myself as a good cook. when ever I can learn something from someone I want to keep on learning. thanks for this tutorial and keep them coming.

Hello Chris I have tried your cousins Hattie,s greens recipe twice ,the first time I followed the recipe to the tee and the second time for Christmas Holidays, I tried to get ahead of myself and thought I would cut up 9 green peppers and 9 onions and throw them in the freezer prior to cooking the greens.What I found was that the green peppers and onions when added to the greens in frozen state they will not dissolve,versus cutting them up fresh and adding them to the greens fresh.The greens were still delicious but ,I will add them in fresh from now on.

I did not know about the cabbage-collards until today. The leaves were so big that I could not wait to try them. I used the cabbage part with some steamed fresh spots. It was a very delicious meal. Needed some jiffy corn bread and a sweet potato. The question n my mind...Why didn't some body tell me about this vegetable. It is my favorite after today. I think you could mix kale n it, and have another nutritious meal.
