I always use prunes (dried) and glacee cherries in my Christmas cakes plus all the other goodies! Hot apricot jam all over, put on marzipan and when it's dried (approx. a week?), ice it.

This IS an incredible fruit cake recipe !! But I have altered some of the ingredients, as I have a diabetic child… I literally halved the amount of butter to less than half, and sometimes I don’t add sugar at all … Also I never use honey, to glaze the fruit cake …honey gets adsorbed in the crust, and disappears … I dilute two to three tablespoons of apricot jam, with a tablespoon of boiling water, instead and I glaze the cake beautifully… Trust me, works fine, as the amount of fruit used,has more than enough sugar to make the cake tasty !! Ive been making it for years like that, and through the year … a low fat and no sugar cake !!! Everyone asks for the recipe, every time !!

will your cake be soft if you add eggs like you did without beating ?so far what i had seen and what i made is all separating yolk n white beating white into stiff peak and adding last by folding in the batter.

this isn't a sponge cake, this is a fruit cake which is dense but moist.

My mother and grandmother took two days of hard work to make their fruitcakes. Each one weighed five pounds and had a lovely dark color, but not as dark as Jamaican black fruitcake. They were sublime! I no longer have the original recipe; nor do I have the physical ability to make one. This easier recipe I can make! I wish I knew why their cakes had that lovely darkness. I am wondering if they used molasses. Any ideas? Thank you for each suggestion. I will be trying them with one exception: rum extract for rum! Maybe not…..🙄😊

When I use bicarbonate soda instead of baking powder my cakes come out darker.

Burn a.cup of sugar in a saucepan till it starts smokin and looks black. Por a quarter cup water and. Leave it aside. Stir now and then.

Looks so very nice and delicious, but not the traditional English Christmas cake, I'm not averse to trying something new, but for the special day, I'm a traditionalist, so prunes, blueberries and cranberries would not be in my cake, I would change pecan nuts for walnuts...after the changes, I am impressed with the easiness and I will use this recipe for this year's cake, with my changes lol, it will have a beautiful covering of marzipan, which I will make with my own fair hands and royal icing... standing centre piece of my Christman tea table..a beautiful, delicious traditional English Christmas cake xxx

it is a last-minute cake and doesn't contain alcohol so, I'll say 5-7 days in the refrigerator and yes you can put marzipan icing on it.

You had me with this recipe, hook, line and sinker and than you completely left out candied cherries, so I had to use another recipe

well, I've used 60g of cherries. the choice of fruit is completely up to you, it just has to be 700g in total.

Hello First Thanks Again For Sharing, but i just want to be Shure about Some ingredients at the Beginning- Apricots 60g, Plain Flour 240g and the Prunes 200g then at Last Apricots 50g, Plain Flour 230g & Prunes 250g which i have to Follow Please? Cheers Mate Thks Again For Sharing.
