Same temp - reduce the time based on the size. Add a skewer in the center, if it's clean, it's done.

Hey there - you certainly can BUT for best results, bake 1-2 weeks before and then every few days drizzle some rum to allow the cake to absorb. This cake lasts a long time.

Hi Moushumi - thanks so much. I love Insiya and Saptarshi and glad that they wanted to collab with me. Instead of molasses, you can make your own caramel by heating water and a tiny bit of sugar in a pan. Heat this till the sugar melts and becomes sticky. Check my Caramel Custard video. There are many eggless Marzipan recipes out there so you don't need the egg, although I find it sturdier. Please also subscribe to my channel and share! Cheers!

You could use any jam ... one year I just used whatever I had on hand. Instead of molasses, the original recipe actually called for caramel - so you can just heat sugar with a tiny bit of water, make a thick caramel and use that! Cheers!

Hey Arijit you can substitute Caramel for Molasses. Heat water and a tiny bit of sugar in a pan. Heat this till the sugar melts and becomes sticky. Check my Caramel Custard video.You can substitute Marmalade for the fig jam. If you really can't find this use any jam or leave it out. I like that the Molasses leaves a dark color. Hey there! Thanks so much! The cake pan was approx 18 x 18. There's no need for baking powder in this cake as it's a heavy dense cake.

Batching up is never an exact science. I would hold back on the fruits, just add enough for two cakes, and if the batter is not over saturated add more. And yes, you can use a bundt pan ... you can probably shave off 5 mins. It's not really the cooking time, the bundt pan will have that slightly drier texture you can expect from the edges of the cake if you had baked it in a regular pan.

I am so glad I saw this video. I was going to attempt my first ever fruit cake and first-ever marzipan and this takes care of my concerns about uncooked eggs. Using this method, how long in advance can the marzipan be prepared and precooked? Or how long can the fruitcake be wrapped in this marzipan ahead of serving and still be tasty?

Hi Catherine! This was my first year too! I would not make the marzipan ahead. It will keep for weeks but marzipan dries out and it's not the best to roll. So only make your marzipan when you need to decorate the cake. This can be prepped and wrapped and it will keep for weeks. I didn't wrap mine, I baked the cake end of Nov and fed it with brandy a few times. Once cut, I stored it in a tin and opened it a few times to allow it to air dry a bit. I only have 5 pieces left but they are still amazing. You have to remember with the marzipan, you have to store these pieces carefully.

No No No. Never black strap molasses. Only regular molasses.

Blackstrap is more concentrated - you can use the regular kind, it's much lighter.
