Christmas Treats: Billionaire Bars & Vanilla Kransel Sandwich Cookies

Here is a little Christmas bonus for you today. It should come in handy if you need to create some last-minute treats for your friends, or guest, or just to have around and enjoy all by yourself. MERRY CHRISTMAS EVERYONE!!!
Billionaire Bars
For Shortbread:
2 cups AP Flour
2 Tbsp cornstarch
1/4 cup of sugar
1 cup Unsalted butter, melted
Combine these ingredients fully, place in an 8x8 pan lined with parchment, and press down firmly. Place in oven for 35-40 mins at 350 F. When finished remove from oven and allow to cool.
For Salted Caramel Ganache:
3/4 cup heavy cream
3/4 cup light brown sugar
3/4 cup unsalted butter, melted
1/4 cup roughly chopped dark chocolate - (72%)
1/2 cup roughly chopped milk chocolate
1 1/4 tsp kosher salt
Place roughly chopped chocolates in a bowl and in a saucepan melt butter, and brown sugar and bring to a boil. Cook for apprx. 2 mins. Then add heavy cream and salt and boil for an additional 1-2 minutes Lower heat and simmer the mixture for 6-7 minutes. Remove from heat and let it cool down for 1-2 minutes. Then pour over the chopped chocolate and stir until the chocolate melts and the ganache thickens. Pour over cooled-down shortbread. Refrigerate for 2-3 hours or overnight.
Vanilla Kransel Sandwich Cookie
1lb (2cups) Crisco
6 cups flour
1 cup sugar
1 teaspoon vanilla
Ground nuts (walnuts or pecans)
Mix sugar & vanilla. Add to flour. Then add Crisco with your hands and mix until able to shape into several balls. Roll out the dough to about 1/4 in thick. Cut out with a round cookie cutter. Brush with egg white (that is slightly beaten w/fork). Dip into the ground nuts (with a little sugar mixed in). Bake at 350 degrees for 8-10 min. (not brown). Put together with jam.

Just a tip, when making desert, always have a jar with warm water next to you, so once you stir your mixture and you want to use the same spoons or folks just put your Utensils in the jar of warm water then that way you can just reuse it again with out washing it. That way you don’t have to lay it on the counter. Then that way won’t have to wipe down your counter🙌🏽🙌🏽🙌🏽🙌🏽

When I was a child we went to my paternal grandmother’s house on Christmas Eve and there was 2 gifts for me to open. One from my grandmother. She gave very small gifts like barrettes for my hair, and similar small gifts for her other grandchildren (she didn’t have much money) but there was dinner and pies which I now realize her 3 children helped finance and prepare. Then we went hope on Christmas Eve evening and on Christmas Day we woke up early to see what Santa had left us. After that we were allowed to take a toy and went to my maternal grandmother’s house for Christmas dinner and to exchange gifts (each child brought a gift for a child, and each adult brought a gift for an adult. Both of my grandmothers died when I was about 8 so after that we went to my dad’s sister’s house on Christmas Eve and either my mom’s side of the family came to our home or we went to an Aunt’s or Uncle’s house on Christmas Day for Christmas dinner and a gift exchange.

My ancestary on my mom's side is german. I make these but make them into thimble cookies. We always used walnuts too. Cooked the cookies then added the jam to the hole. These are my favorite! The bar looks so tasty! Merry Christmas and a blessed New Year!

When we were small Santa Claus came on Christmas Morning. When we were married we went to my in-laws on Christmas Eve and to my parents on Christmas morning. So my family always did gifts on Christmas Day. As mom and dad got older my hubby and I took over the cooking for mother. Lucky for me my husband loved to cook and was an excellent chef so we had fun making turkey dressing and all kinds of food.

Iam from a family of 7 im #7. We would draw names on Thanksgiving of just of the siblings names. No parents. We didn't tell our names. Then on Christmas eve we would exchange presents finding out who got your name. And give mama her presents from the kids. As siblings married there spouse's names where added to drawing. So Santa would come Christmas morning. This same tradition continued whoever was still at home got a visit from santa. And gifts from Santa wasn't wrapped. We were told he couldn't since there was so many of us and he was very busy that night. I didn't marry until i was in my 50's so my husband had adult son and young grandchildren. They didn't do gifts on Christmas eve. But my husband and I continued my family's tradition by giving one gift to each other. Then Santa comes Christmas morning but husbands family presents from Santa are wrapped. Keeping some of both families tradition going. Merry Christmas to you both and extended family's. Be blessed.
