Here is a little Christmas bonus for you today. It should come in handy if you need to create some last-minute treats for your friends, or guest, or just to have around and enjoy all by yourself. MERRY CHRISTMAS EVERYONE!!!
Billionaire Bars
For Shortbread:
2 cups AP Flour
2 Tbsp cornstarch
1/4 cup of sugar
1 cup Unsalted butter, melted
Combine these ingredients fully, place in an 8x8 pan lined with parchment, and press down firmly. Place in oven for 35-40 mins at 350 F. When finished remove from oven and allow to cool.
For Salted Caramel Ganache:
3/4 cup heavy cream
3/4 cup light brown sugar
3/4 cup unsalted butter, melted
1/4 cup roughly chopped dark chocolate - (72%)
1/2 cup roughly chopped milk chocolate
1 1/4 tsp kosher salt
Place roughly chopped chocolates in a bowl and in a saucepan melt butter, and brown sugar and bring to a boil. Cook for apprx. 2 mins. Then add heavy cream and salt and boil for an additional 1-2 minutes Lower heat and simmer the mixture for 6-7 minutes. Remove from heat and let it cool down for 1-2 minutes. Then pour over the chopped chocolate and stir until the chocolate melts and the ganache thickens. Pour over cooled-down shortbread. Refrigerate for 2-3 hours or overnight.
Vanilla Kransel Sandwich Cookie
1lb (2cups) Crisco
6 cups flour
1 cup sugar
1 teaspoon vanilla
Ground nuts (walnuts or pecans)
Mix sugar & vanilla. Add to flour. Then add Crisco with your hands and mix until able to shape into several balls. Roll out the dough to about 1/4 in thick. Cut out with a round cookie cutter. Brush with egg white (that is slightly beaten w/fork). Dip into the ground nuts (with a little sugar mixed in). Bake at 350 degrees for 8-10 min. (not brown). Put together with jam.
