Christmas Zebra Cake is a bright, fragrant cake that will decorate the table for the holidays! Easy to cook even with kids! Perfect with a glass of milk or cup of tea!
INGREDIENTS
For Christmas Zebra Cake:
4 large eggs
1 ¾ cup plus 2 tbsp (300g) all-purpose flour
1 cup (200g) granulated sugar
1 ½ teaspoons (7g) baking powder
¾ cup (180gl) whole milk
¾ cup (180gl) vegetable oil
A pinch of salt
½ teaspoon pure cinnamon or vanilla extract (for red color layers)
½ teaspoon pure mint extract (for green color layers)
White gel food coloring, optional (I used www.amazon.com...)
Red gel food coloring www.amazon.com...
Green gel food coloring
For Cream Cheese Glaze:
1 cup (120g) cream cheese
1 cup (120g) heavy cream
½ cup (50g) icing sugar
¼ teaspoon pure cinnamon or vanilla extract
¼ teaspoon pure mint extract
1 ½ tablespoons lemon juice
PREPARATION
1. Preheat the oven to 350°F (180°C). Grease and line with parchment paper, a 20-22 cm (8-9 in) round cake pan; set aside.
2. Sift together in a large bowl the dry ingredients, flour, salt, sugar and baking powder. Set aside.
3. In another bowl whisk the milk, oil and eggs until combined.
4. Fold the flour mixture into the egg mixture until well incorporated.
5. Using a scale or by eye, divide the dough into 3 equal parts. Add white gel food coloring to one part of the dough if desired. In the second - red gel food coloring and in the third part of the dough - green.
6. Use two tablespoons for each batter to create the layers of batter on the prepared pan. Begin from the middle of the pan, take two spoons of white batter then over it add two spoons of green batter in the center and then - red batter. Repeat these steps until all batter has been used. (If you don't have the patience to make these layers just add one batter on top of the other and create swirls with a knife or fork to create the marbled effect).
7. Bake in the preheated oven for between 45 to 50 minutes or until a toothpick comes out clean.
8. Remove Christmas Zebra cake from the oven and leave to cool for 15 minutes on a cooling rack before removing from the pan.
9. Top with cream cheese glaze, imitating a snowdrift, or just sprinkle with icing sugar.
