In deaf culture people call it like it is because they value information! They don't view it as insulting, another example is when they see a fat person they will ask straight up like "have you gained weight?" It's all cultural

I've seen it as "HALF" (sideways 2 at the chest then downwards) followed by "ETHNICITY" (the "pinch the cheek" shown here).

Good question! I’m not sure but I would say to try and describe you are mixed. I realized a lot of Deaf people don’t relate signs to English. A lot of times my friend doesn’t understand when I finger spell words that’s because signs are concepts rather than words

No, that used to be the sign for Asian, but the pulling of the eyes to demonstrate Chinese or East Asian is offensive. So, the Asian sign is widely used.

It just comes from the signs for the color white and black. I've always assumed the sign for the color black comes from maybe the dark of the eyebrow or a hat. And the sign for white comes from referencing a white T-shirt. So the sign for white person is like the white of your shirt being thrown up into your face.

It's the two "X" signs (the finger-hooks). You just have to add a wide gesture around the top of the head like you're wearing a sombrero to clarify you're talking about Mexicans.

The sign I see for "Mexico/Mexican" involves using your dominant "V" hand facing down at eyebrow level. Then rotate/flip your hand so that your "V" hand is facing out towards the other person. This is typically done twice. According to two italki professors I've studied with, this sign represents a sombrero. As with any cultural sign that is based on a stereotype, be aware that others might be offended.
