wow....kuih bangkit is also known as kuih makan tulang....bcoz of the kneading of d flour....its ings r not many but to get d melting moments....not everyone can achieve it.... this ladys recipe is amazing....looking at d crumbles of the kuih bangkit is a clear testimony that these pretty kuih bangkit r 100% have melting moment texture...👏👏👏👏

Hi Hi Hi, i am a new comer. Will try ur recipe that u share. May i know can i use Kara brand coconut milk? Cos most of the time i bought the fresh coconut in the market or supermarket, i still can smell mild sour taste and smell. very hard to get fresh coconut milk. Thanks

You can try it. But I never use packed coconut milk before, therefore I can't assure you the results.

Check the recipe, the balance of flour will be used to dust the mould. Table no need, I just lay a sheet of parchment paper on the table while shaping the kuih.

I followed your recipe to measure 260g flour but after frying, it is less than 260g. Can you please tell us the exact weight after frying. After frying, I measure the flour and it only weighs 230g because the moisture has evaporated. Will this change the consistency of the dough? Because the ratio is all different now. Could you please advice? Thanks

The tapioca flour is 260g and corn flour is 65g. Total 325g. After frying you will get around 300g. Use 250g to make the kuih, the rest use for dusting the mould

Hi jade, if I double up your ingredients, do I use 4 egg yolks? Can I use 3 instead? Can I know the purpose of the egg yolks as in the kueh bangkit? Appreciate yr explanation, thank you!

The purpose of egg yolk is to give the aroma and taste for the cookies and also make the cookies fluffy, therefore the egg yolk must beat with sugar until it turn pale. If you cut the egg yolk, the cookies may turn out less fluffy and less fragrant taste.

Some people call coconut milk, some people call coconut cream. Whether you call it milk or cream, it can not have water content with it. Water will make the cookies hard.

Hi dear, sorry for late reply. The "melt in mouth" result is not affected by sugar. It is related to the whole process of making the cookies, so if you can adjust the sugar according to your own taste. Thank you for your support 💐
Hello Jade! how to beat egg yolk & sugar into pale and fluffy? i can beat till pale but cant beat till fluffy at all. my cookie turned out super hard like rock T.T

Hi Michelle Lim, just beat the egg yolk with castor sugar as shown in the video. It may take some time. Remember, this cookies can not have a drop of water. So if your cookies turn out very hard like rock, may be due to the coconut milk. We need only coconut cream floats on top, do not add any water. You can use fresh ready press coconut milk sell in market. When you buy you have to tell the seller said you want the 1st press without water one. It will be a bit expensive compared to the standard one.
