Just got the sodium citrate to make American cheese this week. Gonna render me some beef tallow soon, and clarified butter this weekend. Lamb has always been my #1 favorite. Way way supersede everything else I've ever eaten. Its a true treat and it make a point to cook it about 4 times a year different ways so it doesn't loose its allure.... Never chops though that's crazy expensive for nothing

I´m from South Africa and we love Lamb, living in Germany now, we mostly get Leg of Lamb imported from New Zealand. I´m make a leg of lamb for Sunday and are looking at your channel and the PitmasterX channel for some other ideas than the normal way I have been making it. Once you go lamb, you will never turn back 🙂

I haven’t ate much lamb in my life but last week I tried two racks in my smoker. Salt pepper garlic powder with sage and rosemary, set smoker to 225 waited till hit 135,let rest for 20 mins and gotta say I absolutely loved it, making more tomorrow

As an aussie i find most americans butcher lamb (intended). This method actually looks edible and on behalf of everyone thank you for not stuffing raw garlic into it at some point. Lamb Rack is god's gift. The only thing better is the fatty tail crispy on a loin chop or the outside brown edge on a charcoaled boneless leg roast.

Restraint I used to work at marinade them in balsamic vineragarette and other stuff before baking to super rare then grilling to order. Made me fall in love with the dirty sock lamb flavor somehow becomes amazing

As an Aussie that eats lamb all the time. I love doing my racks as a reverse sear🤙. You need to try a lamb shoulder for pulled lamb.

I love lamb, especially the whole rack, I can t see why this didn't do well. I always used to sear and then oven finish. Now that I have discovered the beauty of a Weber I will give it a shot. At least until I make my own offset, using your video as reference of course.

I'm watching your video, but I Hate Lamb With Mint. My Mom is British. Every time we had lamb, it was with mint. I hated it, but I choked it down. Mom is a great cook. 39 years later, I had Mediterranean Lamb and Persian Gulf Lamb. DELICIOUS. Just want you to know where I stand.

Get the color perfect then bring up to temp. The other way around and you risk overcooking the internal when searing

Have you tried crispy pork knuckle. Smoking it for a bit before roasting to crisp is excellent. I have never seen a video on smoked pork knuckle so I just experimented. Doing it again this weekend.

Im certain gamey lamb is a USA thing, in the UK iv only ever had 1 slightly gamey bit of lamb but that was a newzeland import. All the born and bred UK lamb iv had has never had a gamey flavour. One of my turkish mates send hes parents in turkey lamb from the UK as they say its much better then the lamb in their country. Maybe its a country terrain/diet thing? Not sure. What you guys think?

It's most certainly a diet thing. Grass fed lamb will have a much stronger "gamy" flavour. It's from compounds named indoles and mainly skatole that arise from the digestion of grass. Same goes for cattle, it will have a much stronger flavour if it's grass fed. So as a tip, if you're afraid of a gamy taste try and look for grain fed lamb. I actually prefer the "gamy" flavour, it's how the meat is supposed to taste. People are just not used to meat having intense flavours anymore because of the industrial meat production making it more profitable to just feed massive amounts of grains.

Awesome. Lamb is so under appreciated in this country. BUT, come on, please, show your take on a boneless center cut pork loin. I have my own ideas (scored deeply, slathered with salsa verde or achiote paste and smoked and finished rare), but your's are probably better. It's a readily available, cheap cut joint, available at mass grocers all the time. Enlighten us, please.

So many Charlie Angels references come to mind (how was the Chud?) haha. We helped a niece raise lambs for quite a few years for FFA. Awsome times and experience, but the best part is having the end result as lamb chops and meat in the freezer. Sweet feed fed all year for the tastiest dinners. This years will definitely have a couple racks instead of the chops for this absolutely delicious looking cook brother, and the green stuff haha, looks fantastic
