Just made these and they're amazing! Leave them in the pan for ages to caramelise and you get crispy caramel edges!

I recently made these and they were delicious! Especially tasty when the cinnamon sugar burns a tiny bit so it crystalizes and you get nice crunchy bits in your pancake :]

RE: providing Lent suggestions, the thing is that we don't know Ben very well, other than him being a geek and a great chef. Ideally, you want to pick something that has nothing wrong with it in principle, but is a creature comfort that has a big footprint on your life, maybe bigger than it ought to be. It's hard to provide a suggestion for that kind of thing when you only know the person in question from a KZbin cooking show!

We don't have pancake Tuesday here in Finland but we have Laskiainen which is like mid-winter sliding festival (children go sledding if we have snow) and we eat these things called Laskiaispulla (or semla). Laskiaispulla is a cardamom-spiced sweet bun which has its top cut off, and is then filled with almond paste or raspberry jam and whipper cream.

Oh my, these look scrumptious --a definite MUST make! Thanks for the idea & for sharing this super-easy recipe! :) That being said.. the whole "Pancake Day" thing & you guys.. took me WAY back- I began remembering a dish my Nana from Scotland used to make for us a lot, during my childhood. Very similar to a pancake.. but after spending years & years trying to replicate 'em.. I can tell ya, they're definitely different.. somehow. ;) Have tried searching before, but didn't have much success. Let's see.. pancake-ish, scone-ish, biscuit-ish, cake-ish.. moist.. dense.. yum! About the same size/thin-ness as the ones you made (although a wee bit more done.. LOL) I'm thinking they were probably more of a snack.. than a meal, too. I was really young, so never made them "with" her to know the ingredients-- can remember them being piled onto a plate & everyone coming to grab some here & there.... taking 1 or 2... then spreading a small amount of either a red jam/preserves OR marmalade on them.. before rolling it up to eat. No fork/knife or syrup either... that I can remember, anyway.. & they'd be eaten both warm &/or cold, didn't matter. Somewhat richer, perhaps.. & more dense/heavy than a regular traditional pancake.... ANY idea what I'm thinking of?? lol Help, thoughts or... the name of, if you know.. would be a huge help! Both myself.. AND my tummy... would greatly appreciate any input you have. Thx :) (PS: that Jammy Dodger video REALLY took me back! Thinkin' I'm gonna have to try making those next weekend... mmmm, maybe some Empire Biscuits too, while I'm at it.. Haven't had either in ages!!) This video is amazing. I love cinnamon on pancakes, frenchtoast, englishmuffins. For these pancakes, I think that adding chocolate chips would make it even more amazing. Then putting honey on top or even chocolate sauce. Then I couldn't eat for a few days...

You should make Semla which is what they usually eat in Sweden on fat Tuesday (fettisdag). It's a sweet bun (usually with cardamom) with whipped cream and almond paste. THEY'RE SO GOOOOOD!

In Sweden we don't eat pancakes, but this little wheat-bun filled with cream and almond-paste. It's like the best thing in the world, one of our kings even ate so many that he died because of it.

Damn it, your recipes are always FAR too tempting LOL. I'm on a huge cinammon kick right now so this was excellent timing, and I LOVE pancake day. I'll definitely give these a whirl on shrove Tuesday this year, usually I just opt for the traditional lemon and sugar crepes. I might serve them with green apple slices instead of berries though, I love the apple and cinammon combination. Thanks for the recipe!

In Sweden ( as mentioned by Mike) we indeed call it fat Tuesday but in stead of eating pancakes we eat something called semla (or semlor in plural as it is hard to only eat one) I posted the recipe down below, but I could only find it in Swedish so you will have to translate it ... mohahah ... 1 sats vetedeg 1 msk kardemummakärnor 3dl mjölk 50 färsk jäst 1 1/2 dl strösocker 1/2 tsk salt 150 g mjukt smör 1 ekologiskt ägg 11-12 dl vetemjöl special Fyllning 400 g mandelmassa 1 skvätt mjölk 8dl vispgrädde Ägg till pensling Florsocker Hemgjord mandelmassa, 1/2 kg 250 g sötmandel 2 1/2 dl strösocker 1 sats vetedeg Stör kardemummakärnorna fint i en mortel och värm med mjölken tills den är fingerljummen, 37 grader. Smula ner jästen i en bunke och lös den med mjölken, strösocker, salt, smör och ägg. Tillsätt lite vetemjöl i taget och arbeta samman till en smidig deg. Jäs degen i en bunke under bakduk till dubbel storlek i 45-60 minuter. Stjälp upp degen på ett mjölat bord och baka ut till önskade bullar. Hemgjord mandelmassa Skålla och skala mandeln. Mixa mandlarna till ett fint pulver i hushållsmixer. Tillsätt strösocker och mixa i 5-7 minuter tills det blir en slät och varm massa. Semlor Dela degen i 18 bitar och forma dem till runda bullar. Lägg bullarna på plåtar med bakplåtspapper med skarven nedår. Sätt ugnen på 200 grader. Jäs under bakduk i 45-60 minuter. Pensla bullarna med uppvispat ägg och grädda dem i mitten av ugnen i 6-7 minuter. Låt svalna. Skär av topparna på bullarna och gröp ur innanmätet. Rör innanmätet krämigt med riven mandelmassa och en skvätt mjölk. Fyll semlorna med mandelmassa, spritsa över grädde och lägg på locket. Pudra med florsocker.

Pancake-day or Mardi Gras is called Sprengidagur (explosion day) in Icelandic, because you are supposed to eat until you feel like you are about explode and you are supposed to eat saltkjöt og baunir (salt-meat and beans) which tastes better than it sounds. the day before pancake-day is called Bolludagur (bolla can either mean bun or fatty) and we make buns and fill them with whipped cream and jam and put chocolate (or nutella if you're feeling fancy) on top. makes my mouth water thinking about it.
