You might be interested in watching some megacampaigns made by Rageair, CK3's lead game designer! The campaigns are years old, but still immensely entertaining. Most of them follow the same "achieve a goal, switch to another country" structure (the latest such megacampaign being Vox Mundi, which I highly recommend!)

I really feel that REQUESTING a crusade against a high weight target shouldn’t give you a -100 opinion with the Pope lol. Maybe ya know, changing the target through the menu to a lower weight off of a higher weight should do that? Just a thought Paradox.

Was doing my own version of tag switching characters in HIP, started in 867 as the Abbasid Caliph, reunified the eastern portion of the Islamic world under Abbasid rule, switched over to become a Karling and formed the HRE with France and all of Germany, Italy under the empire, then went over to become a Norwegian king, reformed the faith and even got a child of destiny son. Currently switched over to try to make Romuva reformed and maybe gonna see what would the child of destiny do ;)

Your method of turning Sunni is usually the justification I use when I make my Welsh reconquested Prydain or even my Occitan Hispania turn Miaphysite or Orthodox. Love using excommunication as an excuse to Henry the 8th out of Catholicism.

My last game as Enatic Slavs my plan was simple, form the Slavic Union and leave the Byzantine's and West Europe alone because the last thing I wanted was a long crusade. The crusaders attack the Empire and win, forming the Latin Empire. So naturally I take it upon myself to stabilize the region and prevent the Abbasid juggernaut from pulling an Ottoman about 500 years early. So now I own the Balkans, Greece, Thrace, all of East Europe, Finland, all of Denmark, Italy, half of Sweden, and all of Russia West of the Urals. I may be a reformed pagan but I have the largest, most powerful, and stable realm. And I'm slowly eating Germany and what remains of Christian Europe. But I swear it's only to fix the boarder gore...

Just go watch other content, my man, it's really simple. The facecam is in a spot that goes practically entirely unused in this game, calling it screen real estate is obviously a poor argument conceived only because you want your subjectivve opinion to be objectively true. If you don't enjoy content with a face attached to it, that's quite fair seeing as it's entirely subjective. I 100% want you to watch other things that you enjoy more in that case. Spend your time in a way that works better for you, it works better for all of us.

Other people who use 'em spend their time mugging and making stupid faces and acting buffoonish(to cover for the fact that their content is otherwise worthless). You are typically nonplussed by anything and everything and even if/when you do have some reaction it is muted and sedate.
