On Winter vacation from work I start my baking arc. This year my wife wants a 2010’s school style coffee cake and my daughter wants extra tiny chocolate chip muffins. Wish me luck LOL

I literally have phyllo defrosting in the fridge right now! But I'm making feta wrapped in phyllo topped with sesame and honey, like I ate on holiday in Greece.

I will have to try this. Baklava is a staple in my family, with my mom being Lebanese and her father having been a chef, I use the old family recipe, but I switch out walnuts for pistachios. This method looks like an interesting wrinkle to try. I like the fluffy top layers and by scrunching them up like you did it will be even flakier.

Besides legit Greek filo recipes, of course, I really like the “mushroom strudel” in the original Moosewood cookbook.

Baklava is so literally the best nugget of crispy, sticky, gooey buttery dessert ever, think I will still do the original way,if you can’t eat nut pieces put them in your blender ,original way…so everyone can eat and enjoy😊

Yum, Especially with those pine nuts! Looks fun to make and delicious.

Love all you do, Claire. I’d love to try your version of galatobourico; i.e. a custard-filled phyllo pie. Can I tempt you with the idea of cutting the phyllo into strips (1/2”?) tossing them with melted, clarified beurre and Demerara sugar, and using that for the base (patted down firmly) and the top of the pie. Or try this with any pie filling, possibly even savory, sans the sugar. Happy Thanksgiving!

Okay so 3 things need to happen. 1.) Someone needs to show this to Guga because I can tell you he'd make an awesome side dish with it. 2.) Claire and Guga need to do a Collab and while I'm thinking about it 3.) Uncle Roger needs to give Claire the Auntie Title.

I recently attended a baking class offered by a mega-resort in Vegas, hosted by the master baker overseeing all bread production for almost 2 dozen venues. When showing us a challah, he demonstrated his preference to put egg wash in a spray bottle to avoid brush marks on the breads' surface. I realize it's a technique practical for higher volume production. But watching the Phyllo nut tart show today, it made me wonder.... have you ever considered, or tried, putting the melted butter in a small food-safe spray bottle to deal with Phyllo? I know the solids might clog it, but that might be avoidable with repeated shaking, or partly clarified butter.

Could i bind the caramel with shredded fried filo thingies. Like in fhe Dubai chocolate? Maybe it gives it more of this crispy gone soft baklava vibes?
