Clearly Claire is very fancy and probably a little pretentious to baking and cooking, which makes sense for someone who dedicates their life to it. And you have someone who just seems the antithesis of that, trying the cakes and making commentary. It was quite refreshing bc its normally other fancy schmancy chefs trying her food and complimenting it.

I just made this and let me tell you it is everything that I hoped for! I still made a few mistakes and I thought I would leave them here so others can see how wrong everything can go yet still end up delicious. When making the cake batter I added only about 2 cups of flour and it was definitely not enough. My dough was extremely wet and after it proofed the first time (1 hour) it had not grown at all lol. I went ahead and transferred it to my glass dish and it did not go smoothly (quite literally) and was very hard to work with. However, I spread it out and proofed it for another hour (in the oven with the oven light on). This time it also seemed like there was no rise at all however I went ahead and made the topping and used a freezer bag to pipe it onto the twice proofed cake batter. In the topping I used maple syrup (the cheap kind made of corn syrup) instead of the corn syrup because I didn't want to buy it only for one recipe. It worked just fine! All together this took me about 4 hours to make including passive waiting time but keep in mind I don't have a stand mixer so if you do it should go much faster. This is such a delicious cake and I'm so thankful for the recipe. Thank you, Claire! My house smells intoxicating right now.

I feel this was an elaborate plan by Claire to win back that one cake competition she lost and lost to a box cake no less.

Of course! She studied in Harvard, did Masters in baking and history, did Gourmet Makes which became a cultural reset, wrote a cook book, and started her own youtube channel just to do a revenge recipe on the baking competition she lost in high school. It’s all part of her plan. Lol

@@imyell2737 The secret weapon was supposed to be Claire's time in France . And this is the entire reason Claire moved to NYC.

Love that clip at the end with Jo. Small town Canadian, eating small and unadventurous is the norm here. I wish I could taste what Claire makes. So much care and technique is put into her desserts. I love it so much

Had no idea you were from STL! Shoutout from Shaw - you're the best, Claire! Thanks for bringing this delicious dessert to more people :)

This almost didn’t feel spontaneous. I feel like she held a grudge about that competition for all these years, and when she finally thought she was going to prove herself...it fell flat with Jo. And I love them both for it.

Okay, I am losing my mind right now. I remember finding some of Jo's comedy on KZbin a year or two ago? Something like that. She's hilarious, I loved the videos I saw, saved them, still watch them when I need a good laugh. And then it turns out that this some comedian is also friends to KZbin's darling Dessert Person, Claire Saffitz!! The best of both worlds in one video. Love it. And, of course, gotta love the spite that went into this cake, given the history between Claire, Jo, and this cake. Quality all around!

OMG, Jo is fantastic. I love how she describes and talks about the cake. I would 10/10 watch Jo's cooking show where she only cooks junk from boxes.

Omg! I didn’t read the full title and I was shocked and overjoyed to see Claire talking to Jo on the bench!! I LOVE JO!!! It makes me so happy to know they are friends! This is the best. This needs to be a show! Claire bringing Jo food and she tears it apart. Hahaha.

Claire's friend is hilarious and charming. One of those people you could just listen to talking about nothing for a long time and still be entertained.
