Going back and watching these clips and related videos for some menu inspiration. Claire's plating is often beautiful, incredibly precise, bit of an off day here though, borderline pub food aesthetic. When the 'using unusual cuts and making something out of them' thing goes wrong it goes very wrong, as you don't have the familiarity and joy of good meat cooked well to fall back on.

@@chrish12345 Plus the reason why they are food critics is because they are critical. If they weren't critical they wouldn't be sitting at the table.

But their criticisms are stupid. Saying it would be better if it looked better? Then why doesn’t he go back there and plate it? Because he can’t. And then crying about is it worth the calories... That’s an argument for mediocrity, not greatness. Because I can make half-decent food that contains no real caloric hit, but great food in a restaurant is always going to have some fat content. Even in a vegetarian or vegan restaurant, sugar, for example in braised beets, or peanut butter in curries. A restaurant cooking experience will always contain as many calories as a chef is able to put in a dish because largely fat and sugar is what one craves in decadence and a chef wants you to feel their restaurant was special. If you want healthy food make it yourself. But don’t criticize one of the world’s great chefs for making you feel guilty about your calorie intake.
