Hi Lee, when you are using your food processor, just remember that 2 seconds of mixing = 30 seconds of mixing by hand. Food processors are very very quick, and it's easy, very very easy to over mix your dough. Always use the "pulse" function on your machine and this will help you. When putting your fingers in to test dough, always unplug your machine too. ( safety ) I'm glad it turned out for you :-) Yes, lemon is lovely ! :-) Thanks for letting me know you enjoyed it !

I'm making this after hard work out in the yard and I'm dead tired. I can hardly wait until these are ready. I just put the crust in the freezer and am waaaaiiiiitiing...... I would like to make a suggestion: if you're slow in the kitchen, like me, don't turn on the oven until your crust is ready to go into the fridge. Our chef turned it on a bit too early for my oven and I. Great recipe, as always. :)

Hi Tom ! With a shortbread crust there is never any baking powder. It's supposed to be a very dense buttery cookie. In this case it's the base to this lemon square recipe. I'm not sure if this is the info you wanted though Tom.

Hi Ursula ! I usually address people with the name they comment with ( your account says Tom Thomas ) but now that I know you're Ursula that has been cleared up ! haha. As for adding baking powder, you can if you wanted to, I don't think it would do anything wrong, but you just don't need it. If you watch some of my pastry cream video recipes you'll see me adding corn starch, this helps thicken the pastry cream ( custard) and so you could do that also. The eggs are the magic ingredient here. Is is the eggs that give the filling its structure and the thickness. I hope this helps a little bit. 👍😁

please help immediately i have made this before but this time i used baking margarine for the crust and i had let it soften but now instead of the crust being soft it is all soft and like a dough

Margarine is very soft, so you dough will be very soft. I have never used marg in a recipe like this. Butter makes a flaky crust. If marg is all you have, then use it, and try it. Let me know how it turned out for you later today.
