Completely depends upon the recipe and the quality of ingredients. If it is smelling weird you can add any essence of your choice to neutralise it

if i don't wanna use mango puree then should i skip the castor sugar and mango puree for cake sponge

You can definitely skip the mango purée, but you can’t skip the castor sugar since there will be no sweet element
