About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. Hi thank you for sharing yr lovely recipes . i wld like to know if you cant get d palm sugar can u use brown sugar and is there a difference in d taste and also fish sauce can be substituted with what other sauce to get d salty taste? Thank you again for sharing. God bless

Pailin is my favourite youtube chef (and youtube persona) ever. She eloquently explains the ingredients and steps, and she takes into consideration people who are not exposed to Southeast Asian cooking previously. Even as an Asian, I learn a lot from her vids. I had thai for the first time about a week ago (Pad woon sen with chicken) and immediately wanted to learn all about thai cooking and want to try more. It is amazing. I actually love the way you demonstrate each and every part of all your recipes so that it becomes clear for us otherwise in other recipes the chefs usually keep on making the recipe and just telling what to add.

This is delicious. eating it as I write this. I used the shrimp paste from your variation of pad thai video and I didn't have the pickled daicon or dried shrimp but the dish was still delish without it. I found that the measurements for the sauce was good enough for 6oz of dried noodles. enough for two very hungry people. Thanks so much for sharing. Absolutely love it!!

สูตรนี้ใช้ได้ดีค่ะ ขอชื่นชมว่าคุณเป็นคนช่างสังเกตมากนะคะ ต้องศึกษาและรักในการทำผัดไทยจริงๆ จุดแข็งคือคุณไม่เคี่ยวน้ำซอสผัดไทย (หลายสูตรจะเอาไปเคี่ยว มันเสียเวลาด้วย) คุณแม่พี่สอนว่า ถ้าเราใช้เส้นสำเร็จรูปแบบแห้ง แม้ว่าเส้นจะแช่น้ำมาแล้วแต่ตัวเส้นมันจะไปดึงเอาน้ำในซอสผัดไทยอีก น้ำตาลที่เคี่ยวจนข้นนั้นจะไปรัดที่ตัวเส้น ทำให้เส้นแข็งและรสชาติไม่ซึมถึงเส้น

Dear Pailin, I've always loved Thai food, but never felt capable of cooking it myself. Thanks to your show, thai food is a now regular at home. Thank you for bringing us this marvellous dishes in such a pedagogic way. Love to watch it. Question: as I cannot find the preserved daikon raddish, I use fresh radish. Does it change the recipe? fresh radish is not work for this menu. in Thailand sometime we don't add daikon radish. so don't worry about this.

I just made this and it was super good. Although I could not find preserved radish, dried shrimp and my ingredient list took me to several stores AND I ran out of eggs at the time of cooking, it was so worth it. It shouldn't be hard to manipulate the recipe for a vegetarian option, or beef/chicken instead of shrimp, added veggies, etc. Thank you for this tutorial and your other wonderful videos!!

I was skeptical whether I'd done it right because it looked so much paler than what I've ordered, but soon as I took that first bite... wow! My house reeks of fish sauce, my iPad is covered in oil splatter, but my 5 year old proclaimed it the best pad thai in the world. High praise as she's quite the connoisseur. Made this for the 3rd time tonight. OMG, it is just divine. The perfect Pad Thai recipe. Even my teenage son loves it, and that is quite something as he is such a food critic. This time I used the green ends of scallions instead of garlic chives as I got to my local Thai shop half hour before opening time and couldn't hang about. I can say that there is no noticeable difference, it is just as good with scallion ends as with garlic chives.

Well done! Especially on your first time. I also like to add cilantro and the juice of one lime towards the end, along with the bean sprouts, peanuts, etc. And as always, served with a sliced lime.

TFS!!! My sons and I really love pad thai!!! Your video was a great watch or us and we learnt a good deal about the ingredients etc... You present information in a very organized and clear way.. I love your kitchen and must say you have a very pleasant personality! Please do show how to make thai steamed white rice as well, restaurant style... I tried using Jasmine rice but it didn't taste anything like what we get from thai restaurants.

I always worried about being long winded with my cooking videos but I feel that I would prefer to hear "why" something is used and when to use it. Seeing all the "Tasty" videos discouraged me a bit because I figured all people wanted to see was short 1 minute recipes but this channel has reignited my love for the explanations!

Eaten this just now. I had to use tamarind sauce rather than tamarind concentrate but the result was still really good. Made your Moo Ping last week (which was amazing) and Pad See Ew , which was great too. Glad I found your channel.

hey pailin i made this and it's delicious. everyone at my family was impressed.. below are some tips on how to cook the noodles without soaking it overnight and how to alter the sauce if you don't like beansprouts and garlic chives. Pailin was right in that the flavor is very concentrated without the beansprouts,so I used less tamarind paste (3 tablespoons instead of 4) and less preserved radish (2 tablespoons instead of 4). the reason for less of those is because without the beansprouts to increase the surface area of the dish and distribute the flavor, it becomes overwhelming. also, if you don't have time to soak your noodles overnight (say, you just realized you wanted to make it right now), soak the noodles in boiling water in a BOWL over the counter (not on the stove top) and let it sit for around 8-10 minutes until it feels "al dente." if you do this, make sure you don't add water in the palm sugar step, or use at max 1 tablespoon of water (i didn't heat my palm sugar, instead i just let it dissolve in the tamarind and fish sauce naturally).

I've attempted Pad Thai before to pretty bad results. This was a super helpful video and really tasty dish. Had a great time going to Ranch 99 with my 6 year old and finding all the ingredients and watching the how to vid while we cooked it up. The whole fam loved it. Hi Pailin i tried you Phad Thai it came out very good. About the chai po i have the salty but what i did is i rinse once then i soak with water and put some sugar soak for 10 minutes and then rinse it it came out good. I live in Cayman Island so we have limited ingredient.

yea, I found it! Can't wait, I've tried making on my own and never seems quite right, something was missing. Thanks for all the great recipies. How about spicy cod w/ hot bell pepper sauce? My favorite Thai resturant won't tell me, ha ha, wonder why....

i love squid brand fish sauce... however i dont love pad thai i'm going to try it with your recipe because everything ive cooked from your channel has been great!!!!
